Honey tastes uniformly sweet, but the sweetness does not come from one molecule. Inside the jar is a mixture dominated by fructose and glucose, along with water and much smaller amounts of several other sugars.
The exact proportions change with floral source, geography, and batch. Analyses of many honeys still give us a useful picture of what a typical jar contains.
Fructose and glucose make up most of honey’s sugars
A USDA Agricultural Research Service composition study found averages of about 38.4 g of fructose and 30.3 g of glucose per 100 g of honey. Together they account for roughly 69 g—most of the sugar in the sample set.

The roughly 13 g of sugars beyond fructose and glucose are not one single compound. They include maltose, sucrose, and a variety of oligosaccharides whose proportions vary from honey to honey.
Those averages are not a fixed recipe for every jar. Floral source changes the sugar pattern, which helps explain why two legitimate honeys can differ in sweetness, texture and crystallization behavior.
Why isn’t honey mostly sucrose?
Flower nectar can contain sucrose, but bees add enzymes as they process nectar and much of that sucrose is split into glucose and fructose. Mature honey therefore usually contains much less sucrose than granulated table sugar.
Granulated sugar, by comparison, is almost entirely sucrose. Each sucrose molecule is one glucose unit linked to one fructose unit; digestion separates them before absorption.
Honey arriving with glucose and fructose already separate does not make its calories disappear or place it outside normal carbohydrate metabolism. It remains a concentrated source of simple sugars.
The fructose-to-glucose balance helps determine texture
Glucose is less soluble in water than fructose. Honey with relatively more glucose tends to form crystals more readily, while a higher fructose-to-glucose ratio generally helps honey remain liquid longer.
That is one reason two honeys stored in the same pantry can behave differently. One may become creamy or grainy within weeks while another stays fluid for months, without that difference proving that either jar is fake or spoiled.
Temperature, seed crystals and filtration matter too, so sugar ratio is not the only variable. It is simply one of the clearest reasons different honeys do not crystallize at the same rate.
How much sugar is in a normal serving?
The 82 g per 100 g figure shows concentration, but you do not need to eat 100 g to get a substantial amount of sugar. A tablespoon weighing about 21 g contains roughly 17 g of sugars; a 7-g teaspoon contains about 5.7 g.
In U.S. nutrition labeling, honey used as a sweetener contributes to added sugars. Its glucose and fructose came from nectar, but that does not make honey equivalent to whole fruit, where sugars remain inside a food matrix containing water, fiber, and intact cellular structure.
Serving size therefore matters more than trying to decide whether fructose or glucose sounds healthier. One teaspoon stirred into a bowl and several tablespoons poured into a drink create very different sugar amounts from the same food.
The minor sugars add complexity, not a free pass
Honey can contain maltose, sucrose, turanose, trehalose, and other oligosaccharides. Researchers can even use detailed sugar profiles as clues to botanical origin and authenticity.
Those minor compounds help make honey chemically more complex than plain table sugar, but they occur in quantities too small to turn an ordinary serving into an important source of protein, fiber, vitamins or minerals.
For everyday nutrition, the larger picture is straightforward: typical honey is about four-fifths sugar by weight. Its carbohydrate mixture is chemically more complex than granulated sugar and helps create its flavor, moisture behavior, and crystallization pattern, but honey remains a concentrated sweetener.
