What does the cacao percentage on chocolate mean?

Quick answer

Cacao percentage is the total share of cacao-derived ingredients in the bar: chocolate liquor/cocoa mass, cocoa butter, and sometimes cocoa powder. A 70% bar is not 70% cocoa powder or 70% nonfat solids; the remaining 30% is sugar and any other non-cacao ingredients.

“70% cacao” sounds precise because it is precise about one thing: how much of the bar comes from cacao-derived ingredients. It does not tell you how much of that is cocoa butter, how much is nonfat cocoa solids, or how many flavanols are present.

What counts toward the 70%

The cacao share can include chocolate liquor or cocoa mass—which already contains both cocoa solids and cocoa butter—plus added cocoa butter and, in some recipes, cocoa powder.

If a 100 g bar is labeled 70% cacao, about 70 g of the recipe comes from those cacao ingredients. The remaining 30 g can be sugar plus small amounts of vanilla or emulsifier, or other non-cacao ingredients in a more elaborate bar.

It does not mean 70% cocoa powder

This is the most common misunderstanding. Cocoa powder is only one possible cacao ingredient. Chocolate needs fat for its characteristic melt, so a meaningful share of the percentage can come from cocoa butter already present in cocoa mass or added separately.

That means two 70% bars can have different fat, fiber, and texture while showing the same number on the front.

This is also why the percentage cannot substitute for the Nutrition Facts panel. A bar formulated with more cocoa butter may have more fat and calories, while another 70% bar with more nonfat cocoa solids may provide somewhat more fiber or minerals. The front number alone cannot separate those possibilities.

What usually happens to sugar as the number rises

In a simple dark chocolate, a higher cacao percentage leaves less room for sugar. A 70% recipe has at most 30% of its weight available for all non-cacao ingredients; an 85% bar leaves 15%; a 100% bar leaves none.

That makes percentage a useful clue about sweetness, but not an exact sugar calculator. Nuts, fruit, milk ingredients, emulsifiers, or non-sugar sweeteners can also occupy the remainder.

If sugar is the main concern, compare grams of Total Sugars and Added Sugars for equal serving weights. A bar with 25 g sugar per 100 g contributes about 5 g in a 20 g portion. That direct calculation is more reliable than assuming every gram outside the cacao percentage must be sugar.

What the number cannot tell you

  • It does not give grams of flavanols.
  • It does not separate cocoa butter from nonfat cocoa solids.
  • It does not guarantee a certain amount of fiber, iron, or magnesium.
  • It does not reveal whether cocoa was alkalized.
  • It does not predict calories without the Nutrition Facts panel.

An 85% bar can even be more calorie-dense than a 70% bar if it contains more cocoa butter, despite having much less sugar.

Is 100% cacao simply ground cocoa beans?

Not necessarily in a single form. A 100% bar can combine cocoa mass, cocoa butter, and cocoa powder, as long as the recipe is entirely cacao-derived. A current Lindt U.S. 100% bar, for example, lists chocolate, alkalized cocoa powder, and cocoa butter.

Origin and processing add another layer. Fermentation, roasting, and alkalization can change bitterness, acidity, aroma, color, and flavanol retention without changing the cacao percentage printed on the wrapper. Two bars labeled 85% can therefore taste dramatically different and need not have identical micronutrient profiles.

How to read a bar quickly

Use the percentage to understand how cacao-heavy the recipe is. Then read the ingredient list to see which cacao forms are used and what fills the remainder. Finally check sugar and fat per equal serving weight if nutrition is your goal.

For comparison, keep serving size consistent. A small square from an 85% bar may contain fewer grams than a “serving” from another brand, so calories or sugar per labeled serving can look lower even when the composition per 100 g is similar.

Cacao percentage is a recipe proportion, not a quality grade and not a health score.
