Why can nonfat yogurt have more carbohydrate?
Removing fat does not remove lactose. Manufacturers can also use different concentrations of milk solids, so comparing two database entries is not the same as taking one yogurt and simply extracting its fat.
Plain is different from flavored
A nonfat strawberry or vanilla yogurt may contain added sugar. A whole plain yogurt may contain none. “Nonfat” describes fat, not sweetness.

Removing fat mainly changes the energy that comes with the protein
Taking out part of the fat does not remove the watery fraction that contains lactose, minerals and much of the milk protein. That is why comparable plain whole and nonfat yogurts can provide very similar protein while differing substantially in fat and calories.
The choice depends on the overall diet and use. Whole yogurt can feel creamier and more satisfying; nonfat yogurt reduces energy and saturated fat. The mistake is to assume that a slightly higher sugar line automatically means added sugar when the label may simply be showing naturally occurring lactose.
Texture can be a bigger practical difference than the fat number. For choosing between them, there is no need to treat one fat level as universally superior. Whole-milk yogurt may fit someone who values a richer texture or a more energy-dense snack; nonfat can provide similar cultured-dairy characteristics with less fat. Portion size, protein concentration, added sugar and what you eat with the yogurt usually tell you more about the finished meal than the front-of-pack fat claim alone.
Look at the serving unit before drawing conclusions from small numerical differences. One brand may define a serving as 150 g and another as 170 g, so calories and protein per container can diverge even when their values per 100 g are close. Calcium and vitamin D also deserve label-level attention because fortification practices vary. If yogurt is part of breakfast, the toppings may matter just as much: granola, honey, nuts and fruit can change energy, fiber and sugar more than switching from one plain fat level to another. Comparing plain products first and then building the bowl you actually eat keeps the decision grounded in the complete meal rather than in a single “whole” or “nonfat” claim.
If lactose is the concern, fat percentage is not the same question. Whole and nonfat yogurt can both contain lactose unless the product is specifically labeled lactose-free. Culture, straining and added ingredients affect the final amount more than the words whole or nonfat alone.
Which makes more sense?
Nonfat yogurt is useful when reducing saturated fat or calories is the priority. Whole-milk yogurt offers a richer texture. For either one, check protein and added sugars instead of assuming the fat percentage tells the whole story.
