Why cheddar is denser

Cheddar is pressed and aged, losing water. Mozzarella retains more moisture, especially fresh versions. Less water concentrates protein, fat, minerals and calories.

Water concentrates the difference before fat even enters the picture

Cheddar is a drier, aged cheese; fresh mozzarella retains much more water. At 100 g, removing water concentrates almost everything else—protein, fat, sodium and energy. Part of cheddar’s apparent protein advantage is therefore a concentration effect.

Moisture explains much of the nutrition gap

“Mozzarella” covers more than one product. Fresh mozzarella packed in liquid has a high water content, while low-moisture mozzarella used for pizza is denser and can look much closer to cheddar nutritionally. Cheddar is an aged, relatively low-moisture cheese, so a given weight contains more concentrated milk solids than a very wet fresh mozzarella. That concentration helps explain why cheddar often has more calories and fat per ounce without implying that one cheese started from fundamentally richer milk.

Part-skim mozzarella adds another layer. Removing some milk fat lowers calories and total fat while protein can remain relatively high because the cheese still contains concentrated milk protein. Whole-milk mozzarella will not match a part-skim label, and fresh buffalo mozzarella can differ again. If a comparison chart does not specify fresh versus low-moisture and whole-milk versus part-skim, the numbers may look inconsistent even when every source is technically correct.

Sodium can vary substantially by brand and style. Both cheddar and mozzarella use salt for flavor, moisture control and cheesemaking, but the final amount depends on formulation and serving size. Someone choosing cheese mainly for protein might focus on grams of protein per ounce, while a person watching sodium needs to read the specific package rather than rely on a generic “mozzarella is lighter” rule. The same is true for calcium: both can contribute meaningfully, but exact values depend on the product.

Cooking changes the eating experience more than the nutrition label. Low-moisture mozzarella is prized for stretch and controlled browning on pizza, while cheddar releases fat and develops a sharper flavor as it melts. Fresh mozzarella brings more water, which can make a pizza or baked dish wetter unless it is drained. Those culinary differences often determine portion size: a strongly flavored cheddar may be used in a smaller amount, while mild mozzarella may be added more generously.

For a balanced choice, compare the cheese you actually buy on the same gram or ounce basis. If lower energy density is the priority, a moist or part-skim mozzarella can have an advantage. If a sharper flavor means you are satisfied with a smaller amount, cheddar may still fit the meal well. Protein, fat and calories are useful numbers, but moisture, sodium, flavor intensity and realistic serving size determine how those numbers translate to the plate.

Moisture also affects how much cheese looks like a serving. A one-ounce piece of dense cheddar is physically smaller than the same weight of a wet fresh mozzarella, so visual estimates can be misleading. Weighing once can help calibrate portions, especially when comparing recipes. A pizza topped with 100 grams of mozzarella should be compared with 100 grams of cheddar, not with two visually similar handfuls that may weigh very different amounts.

Mozzarella itself varies

Fresh mozzarella packed in whey or brine is not nutritionally identical to low-moisture shredded mozzarella. If calories or sodium are important, compare the exact Nutrition Facts panels rather than using one category number.

For lower energy density, mozzarella often wins; for protein, the gap is much smaller than the calorie gap.
