A sweet potato usually shows a progression from fresh to dehydrated to genuinely decayed. The useful distinction is between simple aging—such as mild wrinkling—and wet, soft, moldy or foul-smelling tissue.
Wet soft spots are a strong warning sign
A sound sweet potato should feel firm. Sunken areas that yield easily, watery tissue, leaking liquid or flesh that collapses are more concerning than a few dry surface scuffs.
Mechanical injury creates entry points for decay organisms. UC Davis notes that handling damage and chilling injury predispose sweet potatoes to fungal decay, including Rhizopus soft rot.
Visible mold changes the decision
Cottony, green, black or white fungal growth together with soft or decaying tissue is a reason to discard the sweet potato rather than simply carve away the visible patch.
Fungal growth can extend beyond the part you can see.
Odor becomes useful once decay is advanced
Fresh sweet potatoes have very little smell. A distinctly fermented, sour, alcoholic or rotten odor, especially together with softening or liquid, strongly suggests deterioration.
Wrinkling alone is often moisture loss
Skin wrinkles as the root loses water. If the interior is still firm and there is no mold, leaking fluid or abnormal odor, the issue may mainly be lower eating quality.
A severely shriveled, rubbery, lightweight sweet potato is unlikely to cook well even without obvious rot.
Cold damage can cause internal browning
Sweet potatoes are chilling-sensitive. UC Davis lists internal flesh browning, shriveling and increased fungal decay among chilling-injury symptoms. A brown patch inside can therefore have more than one cause; judge it together with texture, odor and how extensive the damage is.
Storage history helps interpret borderline sweet potatoes. A root that has slowly become a little wrinkled in a dry pantry may simply have lost moisture, while one that turns soft and wet over a short period is more suggestive of active decay. Looking at texture, odor and the condition of the flesh together gives a better answer than focusing on skin color alone.
Cut the sweet potato if the outside leaves you uncertain. Healthy flesh should be firm for the variety and have a normal color and smell. A small dry bruise can often be trimmed away during preparation, but extensive dark, wet or mushy tissue is a different situation. If decay penetrates deeply, discarding the root is more sensible than trying to rescue a narrow clean-looking section.
Sprouting and shriveling are primarily quality signals. They show that the stored root is aging and using its reserves, so texture and flavor may deteriorate. Mold, leaking liquid and soft rot deserve more weight because they indicate decomposition rather than simple physiological aging.
Temperature matters as well. Sweet potatoes prefer warmer storage than a household refrigerator, and chilling can injure the tissue. Internal discoloration after poor storage can therefore have more than one cause. That is another reason not to diagnose spoilage from a single brown patch without considering firmness, moisture and smell.
For routine storage, keep sound sweet potatoes dry, ventilated and away from obvious heat sources. Inspect the group occasionally and remove any root that begins leaking or molding so it does not remain pressed against the others.
When several sweet potatoes are stored together, one deteriorating root can create a damp local environment and stain its neighbors. Separating damaged pieces early is therefore useful even if the rest of the batch is sound. Avoid washing whole sweet potatoes before long pantry storage because residual moisture can encourage decay; wash them when you are ready to cook. Once cut, the situation changes: exposed flesh should be refrigerated and used promptly rather than returned to long room-temperature storage. Keeping the distinction between whole-root storage and cut-food storage prevents advice meant for an intact sweet potato from being applied to a peeled or sliced one.
A normal earthy or sweet aroma differs from a sour, fermented or putrid odor. Smell should be combined with texture and visible condition rather than used as the only test, especially when the root has already become wet or moldy.
The practical rule
Firm with mild wrinkles: likely a quality issue. Wet-soft, moldy, leaking, foul-smelling or extensively decayed: discard it. If a cut root shows deep damage and you cannot clearly separate sound flesh from decayed tissue, it is not worth trying to salvage.
