Spinach shows why “more calcium” can mean less usable calcium

Cooking changes the numbers without destroying calcium

If the liquid is discarded, part of what left the vegetable is lost from the meal; if it becomes part of a soup or stew, more is retained. Steaming or microwaving uses less water and can be convenient for leafy vegetables. The larger point is that preparation changes the number reaching the plate without making cooked vegetables nutritionally empty.
