Oats stand out for beta-glucan
Some oat fiber is soluble beta-glucan, known for forming viscosity in the gut and helping lower LDL cholesterol when enough is consumed regularly.
Quinoa stands out for protein quality

If calories are being tracked, remember that toppings often outweigh the grain-to-grain difference. Nut butter, sweeteners, oil, cheese, dried fruit, or a large volume of milk can change the energy content of the finished dish far more than switching the base from oats to quinoa.
If fiber is the deciding factor, type matters as well as total grams. Oat beta-glucan is a soluble fiber with specific functional properties, whereas quinoa contributes a different fiber mixture within the seed. Combining either grain with beans, vegetables, fruit, nuts, and seeds creates much more fiber diversity than expecting one breakfast grain to cover every goal.
