If bread dough sits stubbornly at the same size, an old packet of yeast may be the reason. Dry yeast does not switch off on the printed date; its viable cells gradually decline, so an older packet can become too weak to raise dough reliably.
The date is mostly about dependable performance
Unopened dry yeast is designed for long shelf life. Once opened, heat, moisture, and oxygen speed the loss of activity. A jar stored tightly closed in the refrigerator will usually outlast one repeatedly left open beside a warm stove.
Test a small amount before risking a batch
Stir some yeast into warm water around 100–110°F (38–43°C) with a small pinch of sugar. Within about 5–10 minutes, active yeast should create obvious foam and bubbles. A nearly flat surface suggests that the yeast is too weak to trust for a full loaf.
Do not use very hot water. Excess heat can kill yeast and make a perfectly good packet look inactive.
Instant yeast can be checked too
Instant yeast normally goes straight into the flour and does not need to be proofed before baking. The warm-water test is still useful when you are troubleshooting a very old opened package because it answers a different question: are enough cells still alive?
Store opened yeast cold and dry
Seal the package or jar tightly. Major yeast manufacturers commonly recommend refrigeration or freezing after opening. Scoop with a dry utensil and return the container promptly so condensation does not build up.
A date can tell you how old the yeast is; bubbles tell you whether it can still do the job. When ingredients and time matter, a ten-minute test is cheap insurance.
Different types of yeast age differently after the package is opened
Dry yeast is far more stable than fresh cake yeast, but it still loses activity over time. Unopened active dry and instant yeast can remain reliable for a long period when stored cool and dry; once the package is opened, humidity and warmth become bigger enemies. A tightly sealed jar in the refrigerator or freezer slows the decline. Fresh compressed yeast contains much more water and is therefore far more perishable: it belongs in the refrigerator and should be judged over a much shorter time frame. The date on the package is a useful starting point, but storage history determines whether the yeast still performs well.
A proofing test is most useful when failure would waste a large amount of flour, butter or time. Use warm—not hot—water and a small amount of sugar, then watch for clear foaming within several minutes. Very hot water can damage yeast and create a false failure, while water that is too cool may simply make the test slow. Instant yeast is designed to mix directly with flour, but an old packet can still be tested in liquid if you are uncertain. A weak response does not always mean zero activity; it may mean the yeast would raise dough very slowly and unpredictably.
There are also signs that no test is worth doing. Fresh yeast with mold, unusual discoloration or an off odor should be discarded. Dry yeast that has become wet, formed suspicious clumps after moisture exposure, or has an abnormal smell is not worth risking. For reliable baking, label an opened jar with the date, keep the lid tight, and take out only what you need before returning it to cold storage. The cheapest insurance against a dense loaf is not using more old yeast—it is confirming activity before committing the rest of the ingredients.
Bread dough is often the easiest place to notice declining yeast because the rise becomes slow and uneven. Sweet, enriched doughs with butter, eggs or a lot of sugar are even more demanding, so borderline yeast may fail there before it seems completely inactive in a simple lean dough. If an old packet only foams weakly, replacing it is usually more predictable than redesigning the proofing schedule around uncertain activity.
Yeast that has merely slowed with age is not dangerous in the way spoiled fresh food can be; the usual consequence is poor baking performance. The exception is any product showing moisture damage, mold or an abnormal smell, where quality and contamination concerns justify discarding it rather than testing it.
