There is no single complete ranking of “total prebiotics” because prebiotics include different substrates and food-composition databases are incomplete. One well-studied group can be compared reasonably well: inulin-type fructans.

Ranges are broad because cultivar, maturity, storage and laboratory method matter. One Italian analysis found 25.1 g/100 g inulin-type fructans in garlic and 16.7 g/100 g in Jerusalem artichoke, illustrating how much individual datasets can differ.
Concentration is not the same as everyday intake
Eating 100 g of garlic would be unusual. A serving of onions or legumes may be less concentrated yet contribute more to the diet because people eat much larger amounts.
Legumes contribute a different prebiotic family
Beans, chickpeas and lentils contain galactooligosaccharides (GOS). Food analyses have found values ranging from traces to around 2 g/100 g depending on the pulse and processing.
Highly fermentable can also mean more gas
Fructans and GOS are rapidly fermented. Large amounts can trigger bloating or gas, especially in people sensitive to FODMAPs. The richest food is not automatically the best serving for every person.
The practical conclusion
Chicory, Jerusalem artichoke and garlic are concentration leaders. Onions, leeks, artichokes and legumes are often more realistic contributors. Variety is more useful than chasing one “prebiotic superfood.”
Prebiotic describes a function, not one single kind of fiber
Inulin, fructooligosaccharides, galactooligosaccharides, and certain resistant starches are examples of carbohydrates that can be selectively used by gut microbes. They are not distributed evenly across foods and they do not ferment in exactly the same way. Onions, garlic, leeks, legumes, oats, and less-ripe bananas therefore provide different mixtures.
A varied diet supplies a broader set of substrates than relying on one highly concentrated inulin source every day.
Preparation can change how much fermentable carbohydrate reaches the colon
In starchy foods, cooking and cooling can increase some forms of resistant starch. Ripening, grinding, and cooking also alter carbohydrate structure in other foods. That does not turn an ordinary dish into a prebiotic supplement, but it helps explain why the same ingredient may behave somewhat differently after processing.
Legumes remain especially useful because fermentable carbohydrate comes packaged with protein, minerals, and substantial overall fiber.
Increasing intake gradually is usually more useful than chasing the highest dose
A sudden jump in fermentable fiber can bring gas, bloating, or bowel changes. Starting with a tolerable portion and building up makes the habit easier to sustain. Spreading fiber-rich foods through the day and drinking enough fluid can also make the transition more comfortable.
The practical goal is not to identify one “most prebiotic” food. It is to maintain a pattern that regularly includes vegetables, fruit, legumes, whole grains, nuts, and other fiber sources you actually enjoy eating.
Fermented foods and prebiotics are not synonyms either. Yogurt, kefir, kimchi, or sauerkraut may provide microorganisms or fermentation products, while a prebiotic is a substrate selectively used by certain microbes. A food can fit both ideas, only one, or neither. Keeping the terms separate explains why “probiotic,” “fermented,” and “high fiber” should not be treated as interchangeable labels.
Supplements containing isolated inulin or FOS deserve a separate approach from ordinary food. A small scoop can deliver more fermentable carbohydrate than a normal serving of vegetables, so digestive symptoms can appear quickly. If a packaged product adds chicory-root fiber, inulin, or similar ingredients, check the serving size before assuming its fiber will feel the same as fiber from oats or beans.
Prebiotic intake also works within the rest of the diet. A person eating very little overall fiber may benefit more from steadily adding ordinary plant foods than from concentrating on a single specialty ingredient. Diversity, consistency, and tolerance are more useful long-term markers than the highest number on a product label.
A simple way to spread intake is to use several sources across the day—oats at breakfast, beans at lunch, and onions or leeks at dinner—rather than loading one meal with a very large amount of fermentable fiber. That approach usually improves variety and makes digestive tolerance easier to judge.
