Seitan: protein, carbs, and nutrition explained

Wheat gluten itself does not require a high sodium level, but seitan is often simmered in salty broth or seasoned with soy sauce. Commercial products can therefore range from a few hundred milligrams to 700 mg sodium or more per 100 g.

If you plan to serve it with soy sauce, miso, broth, pickles, or another salty component, choosing a lower-sodium seitan can give you more room in the meal. Two products with identical protein can differ substantially in sodium because seasoning is part of the manufacturing recipe.

Is seitan a complete protein?

Wheat protein contains all nine indispensable amino acids, but lysine is relatively limiting compared with the human reference pattern. That does not make seitan useless; it means protein quality reflects the whole amino-acid supply across the diet.

Beans, lentils, and soy are comparatively lysine-rich and can complement wheat-based foods across meals without requiring a precise combination at every sitting. A day that includes seitan plus legumes, soy foods, nuts and grains gives a broader amino-acid pattern than relying on wheat gluten as the dominant protein source at every meal.

Seitan is not gluten-free

The main ingredient is gluten itself. Seitan is not appropriate for people with celiac disease or for anyone who has been medically advised to avoid wheat or gluten.

Marketing terms such as “plant-based,” “high protein,” or “natural” do not change that fact. It is also worth reading the full ingredient list because flavored seitan can contain soy, mustard, or other ingredients relevant to allergies and dietary restrictions.

Micronutrients vary more than the headline protein number

Iron, phosphorus, selenium, and B vitamins depend on the wheat, recipe, and fortification. Vitamin B12 should never be assumed; ordinary seitan provides meaningful B12 only when a B12-containing ingredient is added or the product is fortified.

The same logic applies to calcium and iron. High protein does not automatically mean high micronutrient density across the board. If seitan replaces other protein foods frequently, variety elsewhere in the diet becomes more important.
