Lentils are easier to cook than many larger dried beans because of their small size. Most common lentils do not need to be soaked before cooking.
What soaking actually does
A soak hydrates the seed before it reaches the pot, so cooking can take less time. FAO describes soaking periods of roughly 4–8 hours as a common pulse-processing technique, and cooking studies show that presoaking can reduce cooking time across several legumes.
Skipping the soak does not make lentils unsafe or nutritionally useless. It simply changes how long hydration and softening happen on the stove.
Different lentils behave differently

Age, mineral content of the water and cooking method also influence the result.
Soaking changes soluble compounds too
Some soluble carbohydrates move into the soaking water. Research on lentils and other pulses has found reductions in raffinose-family oligosaccharides and some phytate after soaking and cooking. These fermentable carbohydrates are among the compounds associated with gas after eating legumes.
The reduction is partial. Soaking does not remove all fermentable fiber or guarantee that a person will have no digestive symptoms.
Should you discard the soaking water?
If your goal is to remove part of what has leached out, drain the lentils and cook them in fresh water. Keeping the same water also keeps more of those soluble compounds.
Baking soda is optional
An alkaline soak can speed softening by changing cell-wall chemistry, but it can also make lentils lose shape more quickly. For a pulse that already cooks relatively fast, plain water is usually enough.
A practical rule
For red, brown or other small lentils, skip soaking when convenience matters. For larger, older lentils or when you want to shorten stove time, a few hours of soaking can be worthwhile.
Older lentils are one reason cooking times seem inconsistent. Dried pulses gradually become harder to hydrate during long storage, especially under warm conditions. A bag that has spent years in a cupboard may take much longer to soften than a fresh bag of the same variety. Soaking can shorten the job, but it cannot always reverse every effect of age.
Acidic ingredients are another timing issue. Tomatoes, vinegar and other acidic components can slow the softening of pulse cell walls, so cooks often get more predictable results by letting lentils become tender before adding a strongly acidic sauce. Salt is a separate variable and does not need to be avoided automatically; the bigger distinction is between seasoning and a highly acidic cooking environment.
Split red and yellow lentils behave differently from firm green or brown types because the seed coat and structure are different. The split varieties hydrate quickly and often break down into soups or dals, while intact lentils can hold their shape. Choosing whether to soak should therefore follow the texture you want and the lentil you bought rather than a universal rule.
If you do soak lentils for convenience, refrigerate them during a long soak in a warm kitchen and drain before cooking according to the recipe. For most everyday lentil dishes, however, rinsing, sorting out debris and cooking directly in fresh water is entirely normal.
Rinsing before cooking serves a different purpose from soaking. A quick rinse removes dust and lets you spot small stones or damaged seeds; it does not need to hydrate the lentil for hours. Foam that forms during cooking can be skimmed for appearance if desired, but its presence is not proof that the lentils were inadequately soaked. For soups, the cooking liquid is often intentionally kept because starch and soluble components contribute body. For salads, draining after the lentils are tender gives a firmer, cleaner result. The preparation method should therefore follow the final dish rather than a belief that every lentil must pass through the same soaking routine.
Bottom line
Lentils generally do not require soaking. Think of soaking as an optional tool for cooking time, texture and soluble-compound removal rather than a mandatory safety step.
