Shrimp naturally have a marine aroma, but fresh seafood should not smell sharply sour or like ammonia. FDA guidance describes fresh shrimp as firm with little or no odor and identifies sour, rancid, fishy or ammonia-like odors as signs of spoiled seafood. Texture and storage history matter too. A normal-looking shrimp that has been kept too warm or too long should not be rescued by a sniff test.
Smell is one of the clearest spoilage warnings
Open the package in a neutral environment and notice whether the odor is mild or immediately unpleasant. Strong ammonia, sourness or rancid notes are reasons to discard the shrimp. FDA notes that some spoilage odors can become stronger during cooking rather than disappearing.
Do not taste suspicious seafood to decide. Cooking may change smell and kill many microorganisms, but it does not convert badly handled food into a reliably safe product. If the odor makes you question it, the cost of replacing shrimp is small compared with the risk.
Fresh texture should be firm rather than mushy
Raw shrimp flesh should have resilience. A distinctly slimy coating, excessive stickiness or very soft, mushy flesh suggests substantial quality deterioration, especially when paired with an off odor. Some surface moisture from thawing is normal and should not be confused with persistent slime.
Cooked shrimp naturally have a different, firmer texture than raw shrimp, but deterioration can still produce tackiness, softness and unpleasant odors. Compare the shrimp with how the product normally feels rather than relying on one color change.
Color changes are not a perfect spoilage test
Species, feed pigments, shell condition, cooking and freezing all influence color. Dark spots on shells can result from melanosis, an enzymatic discoloration that affects appearance without automatically proving bacterial spoilage. Conversely, dangerous handling does not always produce dramatic visual change.
Use color as one piece of context. Obvious mold, unusual widespread discoloration together with odor, or decomposing tissue is concerning, but a single dark shell spot cannot answer the safety question by itself.
Refrigerated storage time still sets boundaries
USDA guidance gives raw fish and shellfish a short refrigerator window, generally one to two days at 40°F/4°C or below before cooking or freezing. Cooked seafood is typically kept three to four refrigerated days. These windows assume prompt chilling and a reliable cold refrigerator.
If shrimp spent extended time in a warm car, on a buffet or thawing on a counter, the nominal refrigerator days no longer tell the whole story. Time and temperature history outrank the absence of a bad smell.
Buying and thawing well reduce uncertainty later
Choose shrimp that are properly refrigerated or displayed on clean ice. Frozen packages should be intact and kept hard frozen. Excessive frost or large ice crystals can indicate long storage or temperature fluctuation, although they are mainly quality clues rather than proof of unsafe food.
Thaw in the refrigerator or by another controlled method rather than leaving shrimp warm for hours. Once thawed, keep them cold and cook promptly. Good handling prevents the difficult situation of trying to decide whether questionable shrimp are still acceptable.
When several warning signs agree, discard
A sour or ammonia-like smell plus slime and a doubtful storage history is not a close call. Throw the shrimp away. If only appearance has changed slightly but the product is within a sound cold-storage history, evaluate the full context rather than relying on a cosmetic defect.
Use smell, texture and time-temperature history together. No household test can certify the absence of pathogens, so sensory freshness should never be used to extend a known storage limit or excuse prolonged warm exposure.
When in doubt, remember that spoilage and pathogen risk are related but not identical. Spoilage organisms often create the smells and textures people recognize, whereas harmful organisms may be present without dramatic sensory change. That distinction is why a good cold-chain history and short storage time remain necessary even when the shrimp still look attractive.
