Mango black inside: what may have happened

Internal mango darkening can come from chilling injury, bruising, physiological breakdown or rot. Extensive wet, jelly-like, off-smelling or moldy black flesh should be discarded.

A mango that is black or very dark inside may have suffered chilling injury, bruising, internal breakdown, or decay that moved into the flesh. There is no single cause for every dark patch, and the skin can look much better than the interior. UC Davis describes flesh browning in severe chilling injury as well as internal breakdown disorders and postharvest diseases that can darken mango tissue. If blackening is extensive, wet, soft, sour or fermented-smelling, moldy, or spreading around the seed, the prudent choice is to discard the whole mango.

Cold can injure mango flesh without an obvious warning at purchase

Mangoes are tropical fruit and are sensitive to temperatures that are too low, especially while unripe. Chilling injury can cause uneven ripening, poor flavor, surface pitting, and, in severe cases, browning of the flesh. The problem may become evident only after the fruit returns to warmer conditions and begins to ripen.

This browning is a physiological injury rather than automatically an infection. However, UC Davis also notes that chilling injury increases susceptibility to decay. Very dark internal tissue therefore deserves a conservative assessment, particularly when texture is also abnormal.

Mangoes can develop internal breakdown around the seed

Some mangoes develop disintegrated flesh or cavities between the seed and stem end. Another disorder, often called jelly-seed, leaves flesh around the seed unusually soft or jelly-like through abnormal ripening. These changes can occur without a dramatic external lesion and can make the fruit poor or unusable.

A slightly darker but firm patch is not the same as black, wet, collapsing flesh. Once structure has been lost or discoloration occupies a substantial portion of the mango, trying to cut neat cubes from apparently better areas is not a worthwhile salvage strategy.

Postharvest rots can also create dark tissue that moves inward

Anthracnose and stem-end rots are among the diseases that affect mangoes after harvest. A lesion can begin on the skin or near the stem and extend into flesh, making it dark and soft. Sour odor, leakage, mold, and slimy texture strengthen the evidence that active decay is present.

If those signs occur, discard the mango. Shaving off a thin black layer does not provide a useful safety margin when decay is penetrating soft ripe fruit. There is also no reason to taste obviously altered flesh as a test.

A small localized bruise is a different pattern

A recent impact can darken a limited area as damaged cells undergo browning reactions. If the spot is small, relatively firm or dry, clearly corresponds to a bruise, and the rest of the mango has normal aroma and texture, it may be localized mechanical damage. Use the fruit soon because injured tissue deteriorates faster.

The practical rule is to judge extent and texture together. Local firm browning can reflect physical or physiological injury; widespread blackening, jelly-like or water-soaked flesh, off odor, mold, or obvious rot is a reason to throw the fruit away. A mango does not need black flesh to be ripe, and a black interior should not be treated as an ordinary color variation.

Where the blackening starts can hint at what happened

If dark tissue is concentrated around the seed while outer flesh looks better, an internal ripening disorder is one possibility. If discoloration begins at the stem end and tracks inward, stem-end decay becomes more plausible. A broad bruise may line up with an obvious impact mark on the skin. These clues help explain the fruit, but they do not change the decision when black flesh is wet, soft, off-smelling, or extensive: at that stage the mango should be discarded.

Timing also matters for superficial browning. Fresh yellow mango flesh can darken slightly through oxidation after it has been cut and exposed to air. That does not explain a black mass that was already present the moment the mango was opened. Separating “it darkened after cutting” from “it was black inside when cut” helps distinguish ordinary surface oxidation from an internal defect that developed earlier.

When buying mangoes to ripen at home, avoid fruit with deep impact damage and do not store it under heavy produce. A firm mango can hide a bruise that becomes obvious as it softens. Gentle handling cannot prevent every internal disorder, but it reduces one cause of browning that is under your control.
