A brown center in a pineapple can be a physiological storage injury rather than surface rot. UC Davis describes endogenous brown spot, also called black heart, as water-soaked brown areas that often begin around the core after exposure to chilling temperatures. Mild internal browning may leave outer flesh looking and smelling normal, while severe cases spread through much of the fruit. Whether to use the rest depends on extent, texture, odor, and whether the brown tissue looks like a dry or water-soaked disorder versus active decay.
Black heart can develop while the outside still looks acceptable
Pineapples are tropical fruit and are sensitive to overly cold storage. Exposure below about 7°C or 45°F can cause chilling injury, especially in fruit that is not fully ripe. One recognized symptom is endogenous brown spot: brown, sometimes translucent or water-soaked tissue that starts near the core and enlarges. Because the disorder is internal, the shell may not give a clear warning before the pineapple is cut.
This explains why a pineapple can feel firm and smell reasonably fresh yet reveal a brown center. It is a quality defect, not automatically proof that the whole fruit is rotten. However, chilling injury also increases susceptibility to decay, so the surrounding flesh still deserves a careful check. A physiological explanation should not be used to dismiss mold, sour odor, leaking tissue, or obvious rot.
A small firm brown area is different from spreading soft decay
If the discoloration is limited to the core, the adjacent flesh remains firm and yellow, and there is no off odor, mold, slime, or unusual leaking, you can cut well beyond the discolored tissue and use the unaffected flesh. Expect some loss of flavor or texture near the damaged area. The decision is similar to trimming a localized internal quality defect rather than rescuing a decomposing fruit.
Discard the pineapple if browning occupies a large portion of the flesh, if the center is very wet and collapsing, or if the fruit smells fermented, musty, or rotten. Black rot can also start internally and spread through the flesh, and yeast fermentation in overripe pineapple can produce soft tissue and gas cavities. Those conditions are not improved by simply removing the core.
Use smell, firmness, and the pattern of browning together
Pattern matters. Chilling-related brown spot tends to be centered internally and may have a fairly defined water-soaked brown appearance. Bruising can create a more localized discolored area associated with impact. Microbial decay is more suspicious when tissue becomes progressively soft, wet, slimy, moldy, or foul-smelling. No single color test can separate every cause, so use several clues at once.
A pineapple that releases a normal sweet-tart aroma and has crisp yellow flesh outside a small affected center is a much better candidate for trimming than one that leaks through the shell or gives off an alcoholic odor. If there is visible mold on cut soft fruit, USDA guidance favors discarding rather than trying to cut closely around it because contamination can extend below the surface.
Storage temperature affects pineapple quality
Whole pineapple keeps best when it is not subjected to prolonged tropical-fruit chilling, but once you cut it, the pieces belong in the refrigerator. Keep cut pineapple in a clean covered container and use it while the texture and aroma remain normal. If it was left out for more than two hours, treat it as perishable cut fruit and discard it.
The practical answer is therefore conditional: a small, firm, odor-free brown center can be trimmed generously if the surrounding flesh is normal. Extensive browning, water-soaked collapse, alcohol smell, slime, mold, or rot means the pineapple should go. “Brown center” describes an appearance; the rest of the sensory evidence tells you whether it is a limited quality defect or a deteriorating fruit.
