Bad milk usually announces itself through a combination of sour odor, curdling, unusual thickness, or separation that does not disappear with gentle shaking. Pasteurized milk still contains spoilage microorganisms, so refrigeration slows deterioration but does not stop it forever. FDA notes that spoiled foods develop off odor, flavor, or texture and should not be eaten. If milk smells distinctly sour, contains curds it did not have before, looks ropy or slimy, or has been held too warm for too long, discard it.
Sour smell is useful, but storage history matters first
Fresh pasteurized milk should smell clean and mildly dairy-like. Spoilage bacteria can convert lactose and other components into acids and aromatic compounds, producing the familiar sour smell. Once that odor is obvious straight from the carton, there is no reason to taste the milk to confirm the diagnosis.
However, milk can become unsafe from temperature abuse before it smells dramatically bad. FoodSafety.gov advises discarding milk held above 40°F or 4°C for more than about two hours. That rule is especially important after a power outage, a long car ride, or a carton left on the counter. Smell cannot reliably overrule a known time-and-temperature problem.
Curds and ropy texture show that the milk structure has changed
As acidity rises, milk proteins can lose stability and clump into flakes or curds. Spoiled milk may also become unusually thick, stringy, or slimy. These changes are different from the cream line that can form in some non-homogenized milk, where fat rises cleanly to the top and redistributes with shaking.
Small dried flakes around the cap can sometimes come from residue that dried after pouring, so inspect the liquid itself in a clean glass if the carton rim is confusing. If fresh curds float throughout the milk or the liquid pours in ropes instead of a smooth stream, discard it. Do not strain the lumps out and use the remaining liquid.
Date labels are not a substitute for sensory and temperature checks
A “best if used by” or similar quality date does not mean milk automatically becomes dangerous at midnight on that date. USDA explains that many food date labels indicate quality rather than a universal safety cutoff. Properly refrigerated milk can sometimes remain acceptable near or just beyond a quality date, while mishandled milk can spoil earlier.
Use the date together with how the carton was stored, whether it has been opened, and whether odor or texture has changed. A swollen container, leaking seam, sour smell, or obvious curdling overrides an unexpired date. Conversely, a normal date never makes temperature-abused milk safe to keep.
Keep milk cold and avoid returning warmed milk to the carton
Store milk in the coldest practical part of the refrigerator rather than repeatedly warming it in the door. Pour what you need and return the carton promptly. Do not drink directly from a shared carton if you want to minimize contamination, and avoid pouring unused milk from a glass back into the package.
The decision rule is simple: clean smell, smooth texture, intact packaging, and reliable refrigeration are reassuring. Sour odor, fresh curds, ropiness, slime, swelling, or more than about two hours above safe refrigeration temperature mean discard. When the storage history is clearly poor, do not wait for milk to smell bad before acting.
Different milk products should not be judged by the same texture. Cultured buttermilk is intentionally acidic, and some non-homogenized milk forms a cream layer, while ordinary homogenized drinking milk should pour smoothly. The comparison should be with the product’s normal state when fresh. If a carton of regular milk suddenly behaves like yogurt, strings from the lip, or smells sharply sour, the change is not a normal variation in fat content.
If the carton has frozen accidentally, thaw it in the refrigerator; some separation can be physical, but sour odor still means discard.
