Small white dots or lumps in egg white are often normal egg structures, especially pieces of chalaza or areas of denser albumen. Chalazae are pale twisted cords that help hold the yolk near the center of the egg. In one egg they may look like obvious strings; in another, the same material can curl up near the yolk and appear as a small white knot or speck. They are not mold and are not a developing embryo. The important distinction is between smooth white structures that belong to the albumen and unusual colored, fuzzy, foul-smelling, or widely abnormal changes.
Chalazae can look like strings, knots, or white specks
USDA egg-grading material describes chalazae as twisted strands of albumen that anchor the yolk. They form from layers of egg white and can be especially noticeable in fresh eggs. Depending on how the egg lands in a bowl, a chalaza may stretch out as a cord, curl close to the yolk, or appear visually as several small opaque white areas.
These structures are edible and do not need to be removed for safety. Some cooks strain custards or delicate mixtures when they want an exceptionally smooth texture, but that is a culinary preference. A visible chalaza does not mean the egg is fertilized or that chick development has begun.
How normal albumen differs from a suspicious spot
A chalaza is usually white to ivory, smooth-edged, and similar in appearance to the egg white itself. It does not form fuzzy growth on the surface. If the egg is moved gently in a bowl, the structure may clearly appear connected with the yolk and surrounding albumen. Patches of especially thick egg white can also look more opaque than the thinner portions.
Pink, strongly green, or iridescent albumen is a different finding. USDA guidance associates some of those colors with bacterial spoilage. A putrid odor, visibly abnormal contents, or a badly compromised shell are also more meaningful warnings. If a spot does not resemble ordinary white albumen or chalaza, there is no need to taste the egg to resolve the uncertainty.
Freshness can make the white structures more obvious
Fresh eggs tend to have thicker albumen and more prominent chalazae. As eggs age, the white becomes thinner and the chalazae weaken, allowing the yolk to move more freely. That is why visible pale cords near a tall yolk can occur alongside other signs of good interior quality. They are not an exact dating tool, but they fit normal egg anatomy.
In an older egg, the white may spread farther and the chalazae may be less noticeable. That does not automatically make the egg spoiled. Interior quality declines gradually during storage, while food safety also depends on refrigeration, shell integrity, hygiene, and cooking practices.
What to do when you notice white dots
Crack the egg into a clean bowl and check shape, color, and odor. If the dots are smooth, white, integrated into the albumen, and the egg smells normal, chalaza or dense albumen is the likely explanation. Cook the egg normally. If a recipe needs a perfectly smooth liquid, straining is optional and is done for texture rather than safety.
Discard the egg if the spots are fuzzy, unusually colored, accompanied by a bad smell, or part of broader abnormal changes. It is useful not to mistake normal anatomy for spoilage, but the chalaza explanation should not be stretched to cover every unfamiliar mark. Normal white color, albumen-like texture, and absence of off odor make the distinction much easier.
Cracking each egg separately is also practical when appearance is unfamiliar. It lets you inspect the white and yolk before they are mixed with other ingredients, and it prevents one genuinely abnormal egg from contaminating a larger batch while you decide whether the white structure you noticed is simply normal chalaza.
