The cashew you eat is botanically a seed. It sits inside the hard true fruit of the cashew tree, which hangs from a swollen yellow or red structure called the cashew apple. Culinary language still groups the edible kernel with nuts because that is how it is eaten and handled.
The plant looks almost backwards at first glance. A kidney-shaped object seems to hang outside a colorful fruit, yet the fleshy “apple” is largely accessory tissue, while the smaller hard structure is the true fruit containing the seed sold as a cashew.
The cashew apple is not the tree’s true botanical fruit
Anacardium occidentale produces a juicy cashew apple formed largely from enlarged stalk tissue supporting the fruit. It is therefore described as a pseudofruit or accessory structure rather than the ovary-derived fruit itself.
The true fruit is the hard, curved unit attached to the bottom. Kew botanical descriptions distinguish the fruit from the ripe fleshy hypocarp, and extension sources explain that the edible cashew kernel is found inside that shell.
Cashew apples are edible and are used for juice and other products in growing regions. They bruise and deteriorate quickly, which helps explain why consumers in importing countries normally see only processed kernels.
The familiar curved cashew is the seed inside that fruit
Once the outer shell and surrounding layers are removed, the pale curved kernel remains. That kernel is the seed, containing an embryo and stored nutrients capable of supporting a new cashew plant.
This is different from the strict botanical definition of a true nut such as an acorn or hazelnut. Depending on the morphological treatment, the cashew fruit may be discussed as drupaceous, but the edible portion is still the seed extracted from it.
Food language does not require all “nuts” to share one fruit type. Almonds, pistachios, cashews, walnuts, and true botanical nuts end up together because their culinary roles and nutrient density are similar.
Why cashews are not sold in an untreated shell
The shell around the cashew seed contains caustic cashew nut shell liquid with irritating compounds related to those found elsewhere in the Anacardiaceae family. Cracking a fresh cashew fruit is therefore not comparable with opening a walnut at the table.
Commercial processors use heat and controlled shelling steps to make it possible to remove the kernel safely. A package labeled “raw cashews” generally means the kernels were not roasted for the toasted flavor consumers expect; it does not mean a truly untreated shell was simply cracked open and eaten.
That processing distinction matters for safety. Fresh cashew fruits in their shell are not a home-snacking equivalent of ordinary in-shell nuts.
The unusual structure also explains several labels shoppers see on cashew products. “Whole cashew” normally means the edible kernel is intact rather than broken into pieces; it does not mean the consumer is receiving the complete botanical fruit. Likewise, “raw” cashews sold for eating have still undergone processing needed to separate the kernel safely from the shell system. Those commercial terms describe the state of the edible food, not the anatomy of the original fruit on the tree. Thinking in layers helps: the cashew apple is a swollen accessory structure, the true fruit is the hard kidney-shaped structure attached below it, and the familiar cashew is the edible seed released from inside.
Botanical seed and culinary nut are both useful labels
Culinary “nuts” are grouped by eating qualities: they are dense, rich, crunchy foods used in snacks, baking, sauces, butters, and savory dishes. Botanical ancestry is much more diverse inside that category than the grocery label suggests.
Allergen rules also classify cashew with tree nuts for safety reasons. A person with an allergy should not reason that cashew is safe merely because its edible portion is botanically a seed; regulatory and clinical categories answer a different question.
The most useful summary is: a cashew kernel is a seed inside the true fruit, which is attached to a fleshy accessory cashew apple; in food and allergen contexts, cashew is still treated as a nut. The labels differ because plant anatomy, cuisine, and food safety organize foods for different purposes.
