High heat is not the only reason a puddle appears

Milk, tomatoes, mushrooms, spinach and other additions can contribute their own water. A small splash of dairy can make eggs tender, but a large amount of low-fat liquid leaves more water for the protein network to manage. Vegetables that have not been cooked down first may leak as they heat. Salt is sometimes blamed, but normal seasoning is rarely the main cause of a watery plate; temperature and total moisture are more important. Condensation can also collect when steaming-hot eggs sit under a lid or in a warm serving container, then drip back onto the food.

Stop cooking before the eggs look completely dry

Carryover heat continues to firm scrambled eggs after the pan leaves the burner. For soft curds, use medium-low or moderate heat, stir at the rate that produces the curd size you like, and remove the pan while the eggs still look slightly glossy. They will continue setting for a short time. A heavy pan makes heat easier to control, while a very thin pan over a powerful burner can take the eggs from creamy to tight in seconds. If you are cooking a large batch, divide it or use gentler heat rather than holding finished eggs in the same hot pan.

Manage wet additions separately

Cook moisture-rich vegetables before adding eggs and let excess liquid evaporate. If using cheese, fold it in near the end so it melts without forcing you to keep the eggs on the heat longer. Cream, crème fraîche or butter can add richness, but they are not cures for severe overcooking. For breakfast service, move finished eggs to a warm—not scorching—plate and serve promptly. Eggs held on a steam table or under intense warming lamps continue losing moisture even after they first looked perfect.

There is also a difference between glossy moisture and a true puddle. Soft scrambled eggs are supposed to retain some moisture and can look shiny without being undercooked or defective. Problems start when clear liquid separates from the curds and collects underneath them. If the eggs taste tender and the plate is simply glossy, the texture may be exactly where you intended. If they are firm, dry and sitting in water, the protein network has probably tightened too far or a high-moisture ingredient released liquid after the eggs were already set.

The key is to think of scrambled eggs as a water-holding protein gel. Gentle coagulation keeps that gel tender; too much heat tightens it and pushes water onto the plate. Control the heat, account for watery additions and stop a little before the texture looks fully finished.
