Very hot dry pans and smoking oil leave almost no time to react. Medium or medium-low heat is usually enough for chopped garlic, especially if the goal is aroma rather than deep browning. Butter can brown and its milk solids can scorch too, so watch both ingredients. For crisp garlic chips, use controlled oil temperature and remove them while pale golden because carryover heat continues darkening them after they leave the pan.

The moisture level of the rest of the recipe can protect garlic. When garlic cooks inside tomato sauce, broth or a pan full of sweating vegetables, the surrounding liquid keeps temperatures near the boiling point of water until that liquid reduces. The danger rises after the pan dries out. This is why garlic that seems safe for several minutes in a wet mixture can suddenly darken once evaporation catches up. Watch the pan at transitions, not only by the clock.

Roasted garlic is a useful contrast. Whole cloves inside a bulb cook slowly because their size and retained water keep the temperature gentler while natural sugars transform over a long period. The result is sweet and soft rather than bitter. That does not contradict the fast-burning behavior of minced garlic; it shows how strongly geometry and moisture control the same ingredient.

That extra margin is especially useful on electric and induction burners, where residual pan heat can remain intense after the control is lowered.

The practical rule is simple: garlic is a fast-cooking aromatic, not a vegetable that needs a long sear. Match the size of the pieces and the moment you add them to the rest of the recipe, and stop at fragrant gold rather than waiting for a dark brown color that quickly becomes bitter.
