Melted chocolate can suddenly become thick and grainy when a small amount of water makes its sugar and cocoa particles stick together. Chocolate is unusual because it contains lots of tiny dry particles dispersed through cocoa butter. In a smooth melt, the continuous phase is mostly fat. A few drops of water do not simply dilute that system; they create sticky syrupy bridges between particles and make them agglomerate.
This failure is called seizing. It can happen from a wet spatula, steam from a double boiler, a droplet from a lid or a flavoring that contains just enough water to wet particles but not enough to create a new sauce.
Chocolate is a suspension of dry particles in fat
A chocolate bar contains cocoa butter plus sugar, cocoa solids and, in milk chocolate, milk solids. The solid particles are extremely small and coated by fat so they can slide past one another. That fat-dominated structure is why properly melted chocolate looks glossy and flows even though much of its mass is actually solid material.
Sugar strongly attracts water. When just a little water reaches melted chocolate, it dissolves the surfaces of nearby sugar particles and forms concentrated syrup. That syrup is sticky and connects neighboring cocoa and sugar particles. Millions of tiny dispersed particles suddenly become larger clumps that no longer move freely through the cocoa butter.
Harold McGee describes the effect as water acting like glue between the dry particles. The visual paradox—adding liquid makes a liquid chocolate mass turn solid-looking—makes sense once you remember that chocolate was not an ordinary water-based liquid to begin with.
Why a little water is worse than enough water
The important distinction is concentration. A teaspoon or less in a bowl of chocolate may create only enough moisture to wet particles locally, producing a stiff paste. But if you add enough hot cream, milk or water, the sugar can dissolve into a continuous water phase and the cocoa and fat can be dispersed into a new system such as ganache or chocolate sauce.
This is why recipes can legitimately combine chocolate with cream even though bakers warn that one drop of water may ruin melted chocolate. The first situation is a designed emulsion with plenty of liquid; the second is an accidental partial wetting of a dry-particle suspension.
If chocolate has seized but has not burned, slowly whisking in additional warm liquid can sometimes rescue it for sauce, glaze, batter or ganache. It will not necessarily return to the properties required for tempering or thin candy coating, because its phase structure has changed.
Overheating creates a different route to thick, grainy chocolate
Water is not the only culprit. Chocolate—especially white and milk chocolate—can scorch or become pasty when overheated. Sugar, milk proteins and cocoa solids are sensitive to high localized temperatures. A microwave can create hot spots even when the bowl feels only warm overall.
Use short microwave intervals and stir between them, or use a gentle water bath whose bowl never touches boiling water. Residual heat finishes melting the final small pieces, so there is no advantage in continuing until the chocolate is extremely hot. Dark chocolate generally tolerates somewhat more heat than white chocolate, but all types benefit from patience.
Overheated chocolate may smell burnt or taste harsh. Adding liquid can smooth some textural problems, but it cannot remove burnt flavors. If scorching is obvious, replacing it is usually better than trying to disguise it in a delicate confection.
Dry tools and controlled liquid additions prevent most seizing
Make sure bowls, whisks and spatulas are completely dry. If using a double boiler, keep the simmer gentle so steam does not condense and drip into the bowl. Wipe the bottom of the bowl before pouring chocolate into another container, because condensed water can cling underneath.
Be careful with extracts and flavorings. Oil-based flavoring mixes easily into melted chocolate, while a water-based extract can seize it if used in a small quantity. If a recipe calls for cream or another aqueous ingredient, follow the intended method and temperature rather than adding it drop by drop.
The key is to choose one of two states: keep plain melted chocolate essentially dry, or add enough liquid to build a proper water-containing sauce. The troublesome zone is the tiny amount of moisture in between. That small addition turns free-flowing microscopic particles into a sticky network and makes smooth chocolate look as if it has suddenly turned to wet sand.
