Why 100 Grams of Cooked Chicken Seems to Have More Protein Than Raw Chicken

Following the same piece before and after cooking is more intuitive than comparing two unrelated 100-gram rows. You will see mass fall while the total amount of protein remains relatively stable.

Cooking method and doneness change the amount of concentration

A breast cooked only to the required endpoint may retain more moisture than one held at heat for much longer. The drier breast weighs less and can appear even more protein-dense per 100 grams. Roasting, poaching, steaming, and frying also produce different yields.

Skin, added oil, brines, and marinades complicate comparisons further. Chicken sautéed in absorbed oil is not nutritionally identical to skinless chicken roasted without added fat, even if both finished portions weigh 100 grams. Database descriptions matter.

Exact figures also vary among animals, brands, and laboratory samples. The concentration principle is reliable, but a single table value should not be treated as the exact composition of every chicken breast.

How to track chicken without double-counting protein

If you weigh chicken raw, log a raw chicken entry. If you weigh it after cooking, use a cooked record that reasonably matches the cut and method. Using a cooked weight with raw per-100-gram data applies the wrong moisture basis.

For meal prep, you can calculate the entire batch from its raw ingredients and then allocate the total according to the finished batch weight. If the cooked batch weighs 750 grams and one container receives 150 grams, that container holds 20 percent of the batch nutrients, assuming the meat is distributed evenly.

The apparent protein increase is mostly a water-loss effect created by comparing a fixed weight. The chicken becomes lighter rather than generating extra protein. A 100-gram cooked serving simply represents more original muscle tissue than a 100-gram raw serving.

The easiest way to see the effect is to follow one piece of chicken through cooking. If a raw portion loses water in the pan, the finished portion weighs less while retaining most of its protein. Comparing 100 grams raw with 100 grams cooked therefore compares different amounts of the original chicken.
