Why Mozzarella Releases So Much Water When You Cook It

Fresh mozzarella contains far more water than the low-moisture mozzarella designed for pizza, so the difference can be dramatic: one melts into a relatively dry layer while the other can leave clear or milky puddles.

This is usually normal cheese behavior, not a sign that the mozzarella has spoiled. The amount of liquid depends on the style of mozzarella, how it was stored, how thickly it was cut, how much cheese is used, and how quickly the cooking surface can evaporate moisture.

Fresh mozzarella is built to retain a lot of water

Mozzarella is a pasta-filata cheese: the curd is heated and stretched so casein proteins align into a fibrous network. Water and fat occupy spaces within that structure. In fresh mozzarella, the final cheese intentionally remains highly hydrated and is often stored in whey or brine, giving it its soft, milky texture.

Research on high-moisture mozzarella treats the state and movement of water as a major part of cheese quality. Some water is more tightly associated with proteins, while another fraction is freer to move. Storage changes this balance over time as the protein matrix relaxes and redistributes moisture.

Low-moisture part-skim mozzarella is manufactured differently and contains less water. That is one reason it is widely used on pizza: it melts and browns while releasing less free liquid onto the dough.

Heating makes water move more freely through the protein matrix

As mozzarella warms, fat melts and protein-protein interactions change. Magnetic-resonance studies of mozzarella show that heating increases water mobility and reduces how strongly some water is associated with the casein network. Once that water is free to move, gravity and pressure can push it out of the melting cheese.

On a pizza, the released liquid can collect between pieces of cheese, tomato sauce, and toppings. If the oven is extremely hot and the pizza is thin, some moisture flashes away quickly. In a cooler home oven or under a thick layer of toppings, evaporation may not keep up with release, so puddles remain.

Large slices make the problem more visible because the center of each piece acts like a small reservoir. Shredded low-moisture cheese distributes water over a much larger surface area and usually dries more efficiently.

Draining and drying fresh mozzarella can reduce puddles

If you want to use fresh mozzarella on pizza, remove it from its packing liquid in advance and let it drain in a sieve. Tear or slice it and place the pieces on clean kitchen paper or a cloth so surface moisture is absorbed. Even a short draining period can remove liquid that would otherwise go straight onto the dough.

Use smaller pieces and leave gaps between them instead of covering the entire surface with overlapping slices. Adding the cheese partway through baking can also reduce the time available for it to leak water, although the best timing depends on oven temperature and the style of pizza.

Another solution is simply choosing low-moisture mozzarella when a dry, evenly browned topping is the priority. Fresh mozzarella brings a different flavor and soft texture, so neither style is universally better; they are optimized for different results.

Water release is not the same as spoilage

Fresh mozzarella naturally sits in liquid and can weep more as it is cut, salted, or heated. Clear or milky moisture on its own is therefore not evidence that the cheese is unsafe. Food safety depends on refrigeration, package condition, use-by guidance, and whether the cheese develops abnormal mold, strong off odors, or other deterioration.

Do not leave fresh mozzarella at warm room temperature for extended periods merely to dry it. Drain it under refrigeration when a longer period is needed, then bring it into the cooking workflow close to baking time. Discard cheese that has clearly spoiled rather than assuming heating will correct the problem.

The watery pizza problem is mainly a mismatch between a high-moisture cheese and the amount of evaporation your cooking method can achieve. Drain and dry fresh mozzarella, use it more sparingly, bake hot, or switch to low-moisture mozzarella when you want less liquid.
