You do not need to fill an air fryer with oil. Its main heat-transfer system is fast-moving hot air rather than a bath of fat. Philips specifically says that when oil is used in its air fryers it should be added to the ingredients, not poured into the pan. Many prefried frozen products, including fries and nuggets, already contain enough fat to brown without extra oil.
That does not make oil useless. A very thin film can improve heat contact at the surface, promote browning, and help seasonings or coatings adhere. The useful amount is usually far smaller than what deep-frying requires.
Oil helps the food surface; it does not power the appliance
In deep-frying, oil surrounds food and transfers heat from every side. In an air fryer, circulating air does most of that work. A little surface fat can spread heat across small irregularities and encourage browning reactions, but pouring a large amount into the bottom does not make the appliance fry more effectively.
Excess oil can instead drip, pool, smoke, and create extra cleanup. Naturally fatty foods such as skin-on wings, bacon, and sausages release their own fat as they cook, so adding more is often unnecessary. If heavy white smoke develops, manufacturer troubleshooting commonly points to rendered fat or old grease in the pan.
Fresh ingredients and prefried products have different needs
Fresh potato sticks contain water and starch but little surface fat. Once they are dried thoroughly, a teaspoon distributed across a batch can help color and crispness. Vegetables such as broccoli, zucchini, or cauliflower may also benefit from a light coating, both for browning and to keep exposed edges from drying before they develop flavor.
Commercial frozen fries, croquettes, nuggets, and many snacks have already been prefried or formulated with oil. Adding more may contribute little while increasing smoke or greasiness. Read the package: if it gives air-fryer directions, those instructions are a better starting point than a generic amount.
You do not need laboratory precision, but avoid puddles
For a household basket, a practical approach is to start with about a teaspoon spread over several hundred grams of fresh food and adjust after seeing the result. A sprayer can make a fine film, but check whether the product is compatible with your nonstick coating; some manufacturers discourage certain aerosol cooking sprays because of their additives.
Toss food with oil in a bowl before loading the basket or brush it on lightly. The goal is a slight sheen, not liquid collecting underneath. If a large amount of clean oil is left in the pan after cooking, you probably used more than the food needed.
More oil cannot fix poor airflow or excess moisture
If fries are soft, check whether they were wet, whether the basket was overfilled, or whether the food needed shaking before adding more fat. USDA specifically cautions against overcrowding because hot air needs space to move. Oil cannot compensate for a compact mound of food that never gets enough circulating heat.
The practical rule: start with no added oil for prefried or naturally fatty foods; use only a thin surface coating for fresh ingredients and increase it only when the result warrants it. Do not pour oil into the pan as though the air fryer were a conventional deep fryer.
On the first trial, it is worth using a small batch and watching three things at once: how long the center takes to cook, what the underside looks like, and whether air can move freely between pieces. That test turns a general recommendation into a technique suited to your actual machine. If you change the liner, load, temperature, or arrangement, change only one variable at a time; that makes it much easier to identify what improved or harmed the result and to repeat a safe, even cook.
