A microwave can make one part of a dish boiling hot while another remains lukewarm because energy is not deposited uniformly throughout the food. The magnetron produces electromagnetic waves that reflect inside the oven cavity. Depending on cavity shape, container position, and food geometry, some locations experience stronger fields than others.
The turntable helps by moving food through that pattern, but it does not erase it. Water, fat, and sugar also interact with microwave energy differently, and the shape of the food changes how deeply energy reaches. Two areas of the same meal can therefore heat at noticeably different rates.

In soup, rice, puree, and mixed dishes, stirring halfway moves cooler food into positions previously occupied by hotter food. Rotating a rectangular dish or turning individual pieces accomplishes something similar. Movement does not add energy; it redistributes exposure over space and time.
When stirring is impossible, arranging pieces in a ring with less food in the center can help. A vented cover also retains steam, which transfers heat around the surface and reduces drying while the interior catches up.
Standing time is part of the cooking process
After the magnetron switches off, stored heat continues moving from hotter regions toward cooler ones. USDA calls this standing time and notes that internal temperature can continue to rise. Skipping the standing interval printed on a frozen meal can leave the food less evenly heated.
Standing is particularly important for dense foods, frozen meals, and dishes containing meat or egg. It is not an arbitrary pause: it gives conduction time to smooth out some of the differences created during microwave exposure.
Cold spots are also a food-safety issue
In meat, poultry, fish, eggs, and leftovers, a cold area can allow microorganisms to survive even when another area is steaming. USDA recommends checking temperature in several locations and observing standing time. For reheated leftovers, its target is 165°F.
The practical rule: arrange food evenly, stir or rotate when possible, allow standing time, and check more than one spot when safety depends on temperature. A turntable helps, but it does not make microwave heating perfectly uniform.
