In baking, egg weight and the balance of white and yolk matter much more than shell pigment. A brown large egg is not automatically a better substitute than a white large egg simply because it is brown.

Price and production system should be read separately

Production labels describe how hens were managed; shell color does not. A brown egg can come from different production systems, and so can a white egg. If farming method matters to you, use the actual production label rather than shell shade.
