Cheese starts with milk, yet some aged cheeses contain hundreds or thousands of times less lactose than milk itself. The reason is what happens during whey drainage, fermentation and ripening. Those processes are why hard aged cheeses dominate a low-lactose list.
The cheeses that repeatedly test lowest
Numbers vary by brand and batch, but analytical reviews show a strong pattern. Properly made and matured examples of these cheeses can reach extremely low levels:

For context, cow’s milk contains roughly 4.5–4.8 g lactose per 100 g. A 1-ounce serving of Parmesan at less than 0.003 g therefore contains well over a thousand times less lactose than 100 g of milk.
Serving size matters alongside the per-100-g number. Even when two aged cheeses differ in a laboratory table, a normal ounce of a very low-lactose cheese can contribute a tiny dose compared with a cup of milk.
Why so much lactose disappears during cheesemaking
Lactose is water soluble. When milk coagulates, much of the lactose leaves with the whey that drains away from the curd. Starter bacteria then consume much of the remaining lactose and convert it to lactic acid.
During extended ripening, that process can reduce residual lactose below laboratory quantification limits. One analysis of protected-origin cheeses found less than 10 mg/kg—under 0.001 g/100 g—in 12-month Parmigiano Reggiano, 9-month Grana Padano, cheddar, Emmental and many other matured cheeses.
Cheddar and Gouda show why “zero” is too absolute
The exact manufacturing process matters as much as the cheese name. One clinical review uses around 0.5 g/100 g for cheddar, while standardized mature cheddars in analytical studies have tested below 0.015 g/100 g. Published Gouda samples range from less than 0.02 g/100 g to roughly 0.14 g/100 g.
“Aged cheese” is therefore a useful clue, not a guaranteed laboratory value. Anyone who needs very precise lactose control should rely on manufacturer information or a specifically lactose-free product rather than assuming a number from the cheese name alone. And “lactose-free” does not mean dairy-free; the food still contains milk-derived ingredients and proteins.
Fresh cheeses generally contain much more
At the other end are cheeses that retain more whey and undergo little or no aging. Clinical reviews report roughly 3.2 g lactose/100 g for cottage cheese, about 1.4 g/100 g for feta, and values around 1.5–3.3 g/100 g for mozzarella, depending on the product and analysis.
That does not mean everyone with lactose intolerance must avoid them. Symptom thresholds vary substantially between people and also depend on serving size and whether the food is eaten with a meal. A small portion may be tolerated differently from a large bowl of a fresh cheese.
Lactose intolerance is not milk allergy
Lactose intolerance is difficulty digesting the sugar lactose. Milk allergy is an immune reaction to milk proteins. A cheese with almost no lactose still contains milk proteins and is not made safe for someone with a milk allergy simply by aging.
NIDDK also notes that many people with lactose intolerance can tolerate some lactose. Research suggests many can consume around 12 g in one sitting with no symptoms or only mild symptoms. An ounce of a hard cheese containing less than 0.1 g/100 g supplies under 0.03 g, a very different dose.
Tolerance is individual. Some people do better spreading dairy across the day or eating it with meals, while others prefer products specifically labeled lactose-free. The table estimates exposure; it cannot set a universal personal symptom threshold.
The useful takeaway
If minimizing lactose is the goal, start with hard, well-aged cheeses: Parmigiano Reggiano, Grana Padano, Pecorino Romano, Emmental and Gruyère are consistently low examples. Treat the figures as ranges for real products, not as an immutable property of every cheese with the same name.
