How many calories and how much fat?

USDA’s standard olive-oil reference provides about 884 kcal and 100 g fat per 100 g, with essentially no protein, carbohydrate or fiber. The 100-g figure is useful for comparison but far larger than a normal serving.

A tablespoon weighing roughly 13.5 g contains about 119 kcal and 13.5 g fat. Two tablespoons weigh about 27 g and supply close to 239 kcal. Because oil is so energy dense, a modest difference in pouring can materially change a meal’s calories.

Most of the fat is monounsaturated

Per 100 g, the USDA olive-oil reference contains about 73.0 g monounsaturated, 13.8 g saturated and 10.5 g polyunsaturated fat. In a 13.5-g tablespoon, that works out to approximately 9.9 g monounsaturated, 1.9 g saturated and 1.4 g polyunsaturated fat.

Oleic acid is the predominant monounsaturated fatty acid. The International Olive Council describes a traditionally broad range of roughly 55–83% of total fatty acids, because olive variety, climate and growing conditions shift the profile.

What makes an oil “extra virgin”?

The term does not mean “light” or lower in fat. International and European standards define virgin olive oils as oils obtained from olives only by mechanical or other physical means under conditions that do not alter the oil, without treatments beyond operations such as washing, decanting, centrifuging and filtering.

Extra-virgin oil must also meet strict chemical and sensory criteria. Both the International Olive Council and EU definition set maximum free acidity at 0.8 g per 100 g, expressed as oleic acid, along with additional quality requirements. Those category rules do not lower its calories; extra-virgin olive oil is still almost entirely fat.

Free acidity is not the same thing as total oleic acid

The 0.8% maximum refers to free fatty acids, which are released when triglycerides break down. It does not mean extra-virgin olive oil contains only 0.8% oleic acid, nor is it a direct measure of sour taste.

An oil can contain oleic acid as the dominant fatty acid within triglycerides while keeping the much smaller free-fatty-acid fraction below the category limit. The two numbers describe different things.

What is present besides triglycerides?

Most of the oil consists of triglycerides, but a small fraction contains compounds important for flavor, oxidative stability and chemical identity: tocopherols including vitamin E, phenolic compounds, carotenoids, sterols and volatile aroma compounds.

The USDA olive-oil reference provides about 14.4 mg vitamin E per 100 g, or roughly 1.9 mg in a 13.5-g tablespoon. Phenolic content is much less uniform. Cultivar, ripeness, processing and storage can produce large differences, so there is no single polyphenol number that accurately describes every bottle of extra-virgin olive oil.

Why can one EVOO taste more bitter or peppery?

Olive variety, harvest timing and minor compounds all influence sensory character. High-quality extra-virgin oil is expected to have positive fruity attributes and no sensory defect under formal grading systems. Bitterness or pungency can be normal positive characteristics rather than evidence that the oil has gone bad.

The flavor difference does not change the basic serving math: oil remains concentrated fat. Using EVOO as a culinary fat can provide a strongly monounsaturated profile, but the amount poured still determines the calories.
