What does “cold extracted” mean on olive oil?

On EU-regulated olive-oil labels, “cold extraction” has a specific meaning: virgin or extra-virgin olive oil obtained by percolation or centrifugation of olive paste below 27°C (80.6°F). It does not mean the olives were never warmed, and it does not by itself guarantee better flavor. It describes extraction temperature and method.

“Cold extracted” sounds like a loose marketing phrase, but on olive oils sold under EU labeling rules it has a precise definition. The key threshold is 27°C (80.6°F), and the separation method is percolation or centrifugation.

What the regulated claim means

EU Delegated Regulation 2022/2104 allows the term cold extraction only for virgin or extra-virgin olive oils obtained below 27°C by percolation or centrifugation of the olive paste.

It is therefore not a generic phrase that can be placed freely on any refined olive-oil product.

What happens before the oil is separated

Olives are milled into a paste. That paste is slowly mixed during malaxation so tiny oil droplets combine and become easier to separate.

Temperature affects the balance between extraction yield and preservation of aroma compounds. Warmer conditions can make separation easier, while more moderate temperatures can help limit losses of some volatile compounds.

Cold does not mean no heat at all

The paste can be warmer than the surrounding room and still meet the claim as long as the regulated extraction condition remains below 27°C. Cold extraction is a legal threshold, not a promise that the process happens at refrigerator temperature.

It is not the same as first cold pressed

EU rules reserve first cold pressing for virgin or extra-virgin oils obtained below 27°C by a first mechanical pressing using traditional hydraulic presses.

Most modern mills use centrifugation, so cold extraction is the more relevant term for contemporary production.

Does cold extraction guarantee better oil?

No. Extra-virgin status still requires chemical compliance and sensory quality without defects. Cultivar, fruit maturity, olive condition, processing speed, oxygen exposure and storage all affect the finished oil.

How to read the label

Treat the phrase as useful process information: the oil was mechanically separated from olive paste below 27°C using the specified methods. It does not replace freshness, sensory quality or the extra-virgin category itself.

Temperature is one production variable, not a complete quality grade

During modern olive-oil production, crushed olives are mixed so tiny oil droplets can join together before separation. This mixing stage, often called malaxation, is where temperature and time become especially important. Warmer conditions can improve extraction yield because oil flows and separates more easily, but they can also accelerate the loss or transformation of volatile compounds that contribute fresh aromas. Producers therefore balance yield, processing speed, and sensory goals rather than treating the lowest possible temperature as automatically best.

The regulated “cold extracted” wording gives useful information about that process, but it does not tell you how healthy the olives were, how quickly they reached the mill, whether the oil was protected from oxygen, or how it was stored afterward. Excellent fruit handled poorly can still make disappointing oil, while careful harvesting, milling, filtration, packaging, and storage all influence the final bottle. A cold-extraction claim is therefore one clue within a much larger production chain.

It also does not mean the bottle must taste intensely bitter or peppery. Those sensations are influenced by cultivar, ripeness, phenolic content, and processing choices. A delicate oil can be cold extracted, and a robust oil can be cold extracted. Sensory style should not be used to reverse-engineer the exact extraction temperature at home.

When buying, first identify the legal category, then look at freshness information when available, packaging, and storage conditions. A dark container kept away from heat after purchase may preserve quality better than choosing a bottle for one attractive processing phrase and then leaving it beside the stove. “Cold extracted” is meaningful, but it works best as a process description rather than a universal seal of superiority.

Freshness can outweigh the processing claim after bottling. An oil extracted carefully but stored for a long time in heat or bright retail light may taste less vibrant than a newer bottle without prominent “cold extracted” wording. Harvest date, best-before information, packaging, and turnover at the store can therefore add useful context. The phrase describes what happened at the mill; it does not guarantee ideal handling through every later stage of distribution and home storage.

The claim can also be absent from a perfectly good oil. Producers are not required to make every optional marketing statement they are entitled to use. Judging a bottle solely because it lacks “cold extracted” can therefore exclude oils that were carefully produced but choose to emphasize origin, cultivar, harvest, or sensory information instead.
