Cooked potato starch is powerful stuff

Can gluey potatoes be fixed?
You cannot put released starch back inside the cells. More milk may loosen the consistency but will not restore the original fluffiness. Instead, repurpose the mash where density is useful: spread it over shepherd’s pie, bake it as a gratin, or use it in croquettes or potato cakes.
