Cut a potato into sticks and the knife soon picks up a cloudy film. That is partly starch released from damaged cells. Cold-water soaking is mainly a way to rinse some of that loose surface starch away while also shielding the cut potato from air.
Why the water turns cloudy
Cutting creates a large new surface and leaves starch exposed. Potato Goodness notes that soaking in cold water removes excess starch that can contribute to a sticky or gummy exterior.
You are not removing all the starch from the potato. Most remains inside the cells and is important to the texture of the cooked center.
Fifteen minutes is already useful
For home fries, Potato Goodness suggests soaking cut potatoes for about 15 minutes. Some recipes go much longer, but there is no universal soak time that transforms every variety.
The water also slows enzymatic browning by reducing contact between the cut surface and oxygen, which is handy when you prep fries before the oil is ready.
The important part is what happens after the soak
Water boils at 212°F while frying oil is often around 325–375°F. Surface droplets flash into steam when they hit the oil, increasing bubbling and splatter. A wet batch also pulls the oil temperature down.
Drain the potatoes, spread them out, and dry them thoroughly with clean towels or paper towels. This is one place where almost dry is meaningfully different from dry.
Do you need to rinse until the water is perfectly clear?
Repeated rinsing removes more loose starch, but perfect clarity is not a requirement for good home fries. A short soak, one rinse, and excellent drying are often enough.
Soaking is most useful for potatoes destined for crisp frying because it removes loose surface starch. That starch can make cut pieces stick together and can brown before the interior has cooked the way you want. A brief rinse helps, while a longer soak gives more time for starch to diffuse into the water. The water does not pull all starch out of the potato; it mainly cleans the surface created by cutting.
Cut size should match the method. Thin fries shed starch and cook quickly, while thick chips or wedges need more time for the center to soften. Keeping the pieces similar in size matters more than extending the soak indefinitely. If some are thin and others thick, they will brown at different rates no matter how clear the soaking water becomes.
Drying is the step that turns soaking into a useful frying technique. Water on the surface cools the oil, encourages splattering, and delays crisping. After draining, spread the potatoes on clean towels and blot them thoroughly. For deep frying, many cooks use a lower-temperature first fry to cook the center and a hotter second fry to crisp the exterior; soaked and well-dried potatoes are especially suited to that approach.
Potatoes for roasting or air frying can also benefit from rinsing, but soaking is optional. Variety, surface drying, oil amount, spacing on the tray, and enough heat often have a bigger effect on crispness than adding another hour in water.
Water temperature does not need to be extreme. Cold tap water is convenient because it slows enzymatic browning while the cut potatoes wait, and it avoids partially cooking the exterior. If potatoes are soaked for a long time, keeping them in the refrigerator is more sensible than leaving a bowl at room temperature for many hours. Salt or vinegar may be used in specialized techniques, but plain water is enough when the only goal is rinsing away loose starch.
After frying, draining and seasoning promptly matter too. A wire rack lets steam escape better than piling fries in a deep bowl, where trapped steam softens the crust. Salt adheres well while the surface is still hot. If multiple batches are needed, keep finished fries in a warm oven on a rack rather than covering them tightly. Crispness is therefore the result of a chain of steps—appropriate potato, even cutting, rinsing or soaking, thorough drying, enough hot oil, and good draining—not a single magic bath.
Soaking does not fix every frying mistake
Even perfectly soaked potatoes can turn soft if the fryer is overloaded, the oil stays too cool, or the crust is not dried enough before the fries come out.
Think of the method as two linked steps: cold water removes loose starch; careful drying prepares the potatoes for hot oil.
