Adding a splash of oil to pasta water is a common habit, but it is not the best way to keep pasta from sticking.
Oil mostly stays on top
Oil is less dense than water and does not dissolve in it. Boiling may break it into droplets, but it does not create a reliable film around every noodle. Barilla explicitly recommends skipping oil because it does not prevent sticking well and can interfere with sauce adhesion later.
What actually prevents sticking
Pasta releases starch, especially early in cooking. Use a large enough pot, keep the water moving, and stir immediately after adding the pasta and several times during the first few minutes. Mechanical separation matters more than floating oil.
Why sauce may cling less well
If oil coats the pasta as it is drained, a water-based sauce can slide across that greasy film. For many pasta dishes, you want some surface starch left in place so pasta water and sauce can form a glossy emulsion.
Oil floats where the pasta does not yet need it
Oil added to cooking water stays mostly at the surface and does not reliably stop pasta pieces from sticking to one another. Enough water, early stirring and avoiding an overcrowded pot work better. An oily film on drained pasta can also make sauce cling less effectively, which is the opposite of what many pasta dishes need.
Oil can still be useful later
If plain cooked pasta is being cooled and stored without sauce, a small amount of oil can reduce clumping. That is a different use from adding it to the cooking pot.
For pasta that is going straight into sauce, use water, salt, stirring, and reserved starchy cooking water; the oil in the pot is unnecessary.
What actually prevents pasta from sticking
Sticking is controlled more effectively by water movement and timing than by a slick of oil floating on top. When dry pasta first enters boiling water, its surface releases starch rapidly and neighboring pieces can adhere. Stirring several times during the first minute or two separates those surfaces before they set together. After that early stage, occasional stirring is usually enough for a normal pot. This is particularly useful with long strands, which can clump before they soften enough to submerge fully.
Using an adequately sized pot helps because crowded pasta cools the water sharply and has less room to circulate. The goal is not a mythical exact number of quarts for every shape, but enough water and space for the pasta to move while cooking. Once the water returns to a steady boil, adjust the heat so it remains active without foaming over. Oil does little to solve crowding because it stays largely separate from the water phase where the starch is being released.
The most valuable liquid in the pot is often the starchy cooking water. Before draining, reserve a cup or so if the pasta will be finished in sauce. A small amount can loosen a thick sauce and help create an emulsion with fat, cheese, or tomato components. If a layer of oil has been added to the cooking water, some of it may be discarded with the water anyway; adding measured olive oil directly to the finished dish gives much better control over flavor and quantity.
Rinsing is another habit that depends on the dish. For hot Italian-style pasta served with sauce, rinsing removes surface starch that can help the sauce cling, so it is usually unnecessary. For some cold salads or specific preparations where cooking must stop quickly, rinsing can be useful. That decision has a direct culinary purpose, unlike adding oil to the boiling water simply because the pasta might stick.
If pasta needs to wait before saucing, the better solution is logistical: have the sauce ready and combine the two promptly. Drained pasta left in a colander will stick as its surface starch cools and dries, even if oil was present in the cooking pot. Finishing the pasta in sauce for the final minute, with a splash of cooking water if needed, addresses texture and coating at the stage where it matters most.
Salting the water is a separate choice from adding oil. Salt dissolves throughout the cooking liquid and seasons the pasta as it hydrates; oil floats and does not perform that role. If sodium intake is a concern, you can adjust how heavily the water is salted and rely more on the sauce, cheese, herbs, or other ingredients for the final balance.
