Buying a firm pear and waiting often works. Buying an immature pineapple and expecting it to become much sweeter does not. The difference is whether the fruit is climacteric or non-climacteric.
Fruits that keep ripening
Climacteric fruits undergo a characteristic rise in respiration and ethylene during ripening. Common examples include:
- Banana
- Avocado
- Pear
- Apple
- Mango
- Kiwifruit
- Peach and nectarine
- Plum
- Persimmon
- Cantaloupe
If harvested physiologically mature, they can soften, develop aroma, and change composition after picking.
Fruits that do not gain much true ripeness afterward
Pineapple, citrus, grapes, strawberries, cherries, and watermelon are non-climacteric. They may soften, lose water, or change color, but they do not go through the same strong postharvest rise in sweetness as bananas or mangoes.
What it means when shopping
A hard avocado can be bought several days ahead. A pale strawberry will not become much sweeter at home. A pineapple needs to have been harvested sufficiently mature.
“Ripening” is not the same as simply becoming softer
A non-climacteric fruit can soften, lose water or deteriorate after harvest without developing more sugar or the aroma profile of normal ripening on the plant. That distinction is why strawberries, grapes and citrus are best bought already tasting good.
Bananas, pears, avocados and some tomatoes can be bought firmer and allowed to continue ripening at home. Knowing which group a fruit belongs to changes buying strategy more than any later kitchen trick.
Ethylene explains why some fruit improves on the counter and some does not
Climacteric fruits undergo a rise in respiration and ethylene production as they ripen. Bananas, pears, peaches, nectarines, avocados, mangoes, kiwifruit, and many tomatoes can therefore become softer, more aromatic, and more appealing after harvest if they were picked mature enough. A paper bag can concentrate the ethylene around them and speed the process. Adding a ripe banana or apple can increase that effect, although warmth and the fruit’s starting maturity still matter.
Non-climacteric fruit behaves differently. Strawberries, grapes, cherries, most citrus, pineapple, and many berries do not continue building the same ripeness after harvest. They may soften, lose acidity, shrivel, or become more aromatic as they sit, but that is not the same as becoming sweeter and fully ripe. If a strawberry was picked pale and bland, leaving it on the counter will not recreate the flavor development it would have had on the plant.
This distinction changes how to shop. A firm pear or avocado can be a sensible purchase when you plan to eat it several days later. A pineapple, grape, or strawberry is better judged close to the quality you want at the time of purchase. Color alone is not always enough: aroma, firmness, variety, and signs of dehydration or damage can be more informative. Refrigeration slows ripening and deterioration, so moving ripe climacteric fruit into the refrigerator can buy time once it reaches the stage you like.
Ethylene also explains some storage mistakes. Sensitive produce can age faster when stored beside strong ethylene producers. Leafy greens, cucumbers, and some other vegetables may yellow or deteriorate sooner in a mixed produce drawer with ripe apples or bananas. Separating produce is not about keeping every fruit in isolation; it is about using the gas intentionally. Ripen the fruit that needs it at room temperature, then chill it when ready, while keeping ethylene-sensitive items away from a concentrated source.
“Picked mature” is an important qualifier. A climacteric fruit harvested too early may soften without ever developing good aroma or sweetness because it did not complete enough development on the plant. Commercial supply chains therefore manage maturity at harvest, temperature, atmosphere, and ethylene exposure together. Home ripening can finish a process that has begun; it cannot repair every quality loss created by premature harvest.
Bruising also changes the picture. A fruit that feels soft because tissue was damaged in transport is not necessarily ripe. Check whether softness is even, whether the fruit smells pleasantly aromatic, and whether there are sunken or leaking spots. Ripeness and deterioration can occur at the same time, particularly late in the process.
Ethylene lets you adjust the pace
Placing ripe climacteric fruit with firmer climacteric fruit can speed ripening; refrigeration after the desired stage is reached generally slows it.
“Ripen at home” only works well for fruit that is physiologically capable of continuing the process after harvest.
