Bananas are climacteric
During ripening, respiration rises and ethylene signaling triggers chlorophyll loss, pulp softening, stronger aroma, and conversion of starch to soluble sugars.
Other fruit adds more ethylene
Apples, pears, avocados, peaches, and mangoes are also climacteric. Ripe specimens release ethylene and can raise the concentration around nearby bananas.
A paper bag helps without sealing everything
The goal is to retain some ethylene, not create an airtight container. Paper slows gas dispersal while letting moisture escape better than tightly closed plastic.
Ethylene does not “infect” fruit; it accelerates a program already present
In climacteric fruit, ethylene acts as a signal for ripening processes that include softening, aroma changes, chlorophyll loss and starch conversion. Keeping a banana beside a ripe apple or pear raises the local concentration of that signal; it does not add ripeness from the outside like an ingredient.
That also explains the limit of the trick: it works best with fruit that can continue ripening after harvest. Concentrating ethylene around a strawberry or grape does not recreate the same increase in sweetness seen in a banana.
How to use ethylene to your advantage at home
Ethylene is a gaseous plant hormone. Bananas respond to it by accelerating ripening processes such as softening, color change, and aroma development. Put bananas near apples, pears, avocados, or other ethylene-producing fruit and the local concentration can rise, pushing ripening along faster. A paper bag takes advantage of the same principle by holding some ethylene near the fruit without creating the completely sealed, damp environment of a plastic bag.
That effect is useful when a banana is stubbornly green, but it also explains why a mixed fruit bowl can shorten storage life. To slow things down, separate strong ethylene producers from fruit you want to keep longer and avoid unnecessary warmth. Once bananas reach the ripeness you like, refrigeration can slow further internal change even though the peel may darken; a dark peel does not automatically mean the flesh has spoiled. If bananas become too ripe for eating out of hand, peel and freeze them for smoothies or baking. Managing proximity and temperature gives more control than assuming every fruit ripens at the same pace.

To speed a green banana, putting it in a paper bag with a ripe apple or pear can concentrate some ethylene around the fruit without creating a completely sealed container. To slow ripening, do the opposite: keep bananas away from very ripe ethylene-producing fruit and from warm spots in the kitchen. Once bananas are ripe, refrigeration can extend their useful life even though the peel may darken quickly. The flesh can remain acceptable after the skin looks brown, so peel color after refrigeration is not always an exact indicator of what is happening inside.
If a bunch contains bananas at different stages, separating the ripest ones can make the remaining fruit easier to manage. Very ripe bananas do not have to be wasted: peel and freeze them for smoothies, baking, or blended desserts. Ethylene management is therefore mainly a way to control timing, not a way to stop ripening indefinitely.
Other fruit can respond differently to the same kitchen conditions. Apples and pears may also produce ethylene, while berries are more likely to deteriorate from moisture and mold than to benefit from being placed beside a banana. Grouping fruit by how quickly it ripens and checking it regularly is more useful than treating one storage rule as universal.
How to slow ripening instead
Separate bananas from ripe ethylene-producing fruit. Once bananas are ripe, refrigeration can slow the pulp even though the peel may darken.
Fruit together does not create ripeness from nothing; it concentrates a natural signal those fruits already use to ripen.
