To slow ripening: reduce ethylene and cool ripe fruit

Keep bananas away from ripe ethylene-producing fruit. Once they are yellow and at the stage you want, refrigeration slows pulp softening. The peel will often turn brown or black, but the inside can stay useful longer.

Managing ripening means changing speed, not stopping time

Managing ripeness day by day

Bananas are climacteric fruit, which means ethylene production and respiration rise as ripening accelerates. A paper bag works because it traps some of the ethylene around the fruit while still allowing more gas exchange than a sealed plastic bag. Adding a ripe apple, pear, avocado, or another ethylene-producing fruit can speed the process further. Check the bananas daily, because the same setup that moves green fruit toward yellow can carry ripe fruit into brown, very soft stages surprisingly quickly.

To slow ripening, do almost the opposite: keep bananas away from strong ethylene sources, avoid enclosing them, and place them in a relatively cool room out of direct sun. Refrigeration is useful once the banana has reached the ripeness you want. The peel may darken rapidly in the refrigerator, but the flesh can remain acceptable longer because low temperature slows many ripening reactions. Very green bananas, however, can be injured by chilling before normal ripening is established.

Separating individual bananas from a bunch has a smaller and less predictable effect than temperature and ethylene exposure, but reducing close contact with already very ripe fruit can help with household timing. Wrapping the crown is often promoted online; any benefit is modest compared with simply controlling the environment around the fruit. If you need two bananas tomorrow and the rest later in the week, split the bunch and manage the groups differently rather than treating every banana the same.

Once bananas are too soft for eating out of hand, freezing is a better waste-prevention tool than trying to slow them further. Peel them first, cut into usable pieces, and freeze on a tray before transferring to a bag if you want pieces that separate easily. Frozen ripe banana works well in smoothies, baking, oatmeal, and blended desserts. The texture will be soft after thawing, so it is not a substitute for a fresh firm banana.

Color is a useful guide but not a perfect clock. Cultivar, harvest maturity, handling, and room temperature all affect how quickly a banana moves from green to spotted. Instead of relying on a fixed number of days, match the storage method to the stage in front of you: trap ethylene when fruit is too green, cool it when it is ready, and freeze it when softness has passed the point you enjoy.

For baking, very ripe bananas are often preferable because starch has been converted further toward sugars and the fruit is softer and more aromatic. That is a different target from a banana meant for slicing over cereal. Managing ripeness works best when you decide what the fruit will be used for, then choose the temperature and ethylene exposure that move it toward that texture.
