Its nutty flavor and slightly chewy texture are noticeable, so it works best when those qualities fit the dish rather than when the goal is to imitate couscous exactly.

Couscous wins on delicacy and speed. The tiny semolina granules hydrate rapidly and create a soft, fluffy base for stews, roasted vegetables, fish, or meat. Because traditional couscous is usually made from refined durum wheat, it generally contains less fiber than whole-grain bulgur. Whole-wheat couscous narrows that gap, which is another reminder that the specific package matters. Looking at the ingredient list and nutrition panel is more informative than assuming every couscous product has the same composition.

The apparent calorie difference per 100 grams cooked is partly a water story. A grain product that holds more water weighs more for the same amount of dry solids, so cooked values can shift with preparation. If you are comparing the two for energy intake, use similar cooked portions or compare dry weights before cooking. For fiber, the processing difference remains more meaningful: bulgur retains the whole wheat kernel components, while refined couscous does not.

Both foods contain gluten because both come from wheat, so neither is appropriate for a gluten-free diet unless a different product is specifically made from another grain. For everyone else, the choice can be practical rather than ideological. Choose bulgur when whole-grain fiber and chew are priorities; choose couscous when you want a very fast, tender base. Rotating both creates more variety than trying to declare one universally superior.
