Processed vs. ultra-processed foods: differences and examples

Every ultra-processed food is processed, but not every processed food is ultra-processed. Freezing vegetables, pasteurizing milk, canning beans or fermenting yogurt all process food without automatically making it ultra-processed. In NOVA, ultra-processed foods are industrial formulations that go well beyond preserving or preparing the original food.

A bag of frozen spinach and a soda are both industrial products, but nutritionally they tell very different stories. Calling both “processed” is accurate in a broad sense; treating processing as if it always means the same thing is not.

The useful question is what was done to the food and why.

Processing simply means changing food in some way

Washing, cutting, grinding, pasteurizing, fermenting, freezing, cooking and canning are all forms of processing. Some happen at home and some happen in factories.

Frozen vegetables, pasteurized milk, olive oil, plain yogurt, cheese, bread and canned beans are all processed to some degree. The word alone does not tell you their nutritional quality.

Processing can also solve practical problems. Pasteurization reduces microbial risk, freezing slows spoilage and canning makes beans shelf-stable and ready to eat. The fact that a factory was involved does not tell you whether the finished food is high or low in fiber, protein, sodium or added sugar.

What “ultra-processed” adds

The NOVA system uses “ultra-processed” for industrial formulations made largely from substances extracted or derived from foods, refined ingredients and often additives that modify flavor, texture, color or shelf life.

Common examples include many soft drinks, candy, flavored extruded snacks, some sugary breakfast cereals, packaged desserts and certain reconstituted meat products.

The central idea is not that a machine touched the food many times. It is that the finished product is assembled from fractions, refined components and additives in a way that goes well beyond preserving or cooking the original food. That is why canned tomatoes and a formulated dessert made from starches, syrups, fats and flavors are not treated as equivalent simply because both are industrially produced.

The distinction is easier to see with examples

The number of processing steps is not enough. A food can be cooked, frozen and packaged and still remain essentially the original food.

There are gray areas too. A factory-made bread containing flour, water, yeast, and salt can be very similar to a bakery loaf even though production is industrial. Add modified starches, emulsifiers, flavors, and other ingredients designed to rebuild texture or taste, and the classification may change. The actual formula matters more than the presence of plastic packaging or a barcode.

An ingredient list gives clues, but there is no five-ingredient rule

A long ingredient list can suggest a complex formulation, but counting ingredients is unreliable. A homemade curry can contain 15 ingredients and not be ultra-processed, while a shorter formula can contain highly refined substances.

Refined starches or oils, syrups, protein isolates, flavors, emulsifiers and other ingredients used to reconstruct taste and texture can be clues within the NOVA framework.

One additive by itself also does not make every product nutritionally equivalent to soda or candy. NOVA looks at the formulation as a whole and the purpose of the processing. For shopping decisions, it is useful to pair that classification with the Nutrition Facts panel and with how often the product is eaten.

Two packaged breads can both contain an emulsifier and still have very different nutrient profiles. One may be based on whole-grain flour with substantial fiber and modest sodium; another may be a sweet refined-flour product. NOVA describes formulation and processing purpose, while the nutrient label helps compare concrete amounts.

“Ultra-processed” is not a required Nutrition Facts field

U.S. labels show calories and nutrients such as fat, sodium, carbohydrate, added sugars and protein. They do not have a mandatory box declaring whether a product is ultra-processed.

NOVA is a classification used in research and public-health discussions, not a standard legal label printed on every package.

That means there is no single front-of-package symbol that settles every borderline case. When a formulation is complex, researchers may need detailed ingredient information to classify it, and ordinary labels do not always reveal every manufacturing detail.

Why the distinction matters

Many ultra-processed products combine high energy density, added sugars, refined starches, fats and sodium in forms that are easy to eat quickly, although not every product has the same profile. That can make the category useful when studying dietary patterns.

Products inside the same NOVA group can still differ substantially in protein, fiber, sodium, or added sugar. Two breakfast cereals may both be ultra-processed while one supplies several times more fiber and much less added sugar. The classification and the nutrient label answer different questions.

Using it well also means not turning “processed” into a synonym for “bad.” Freezing vegetables, pasteurizing milk and canning beans can improve safety, convenience or shelf life without erasing nutritional value.

For a real shopping decision, a useful order is to identify the food, look at the formulation, then compare the nutrients that matter for that category. That avoids both demonizing a simple canned staple and using one attractive protein or fiber number to ignore the rest of a highly formulated product.
