What ultra-processed foods actually are

Quick answer

An ultra-processed food is not defined simply by coming from a factory, being wrapped in plastic or having a long ingredient list. In NOVA, it is typically an industrial formulation built largely from refined ingredients or substances derived from foods, often combined with flavors, emulsifiers, colors, sweeteners or other additives that shape taste, texture and appearance.

“Ultra-processed” is used so broadly that it can end up meaning little more than “packaged food I think is unhealthy.” That is not a useful definition.

The term mainly comes from NOVA, a system that classifies foods by the nature and purpose of processing rather than by one nutrient such as sugar, fat, or calories. It describes how a product is constructed; it is not, by itself, a complete nutrition score.

The core idea: a formulation rather than a modified whole food

An ultra-processed product is commonly assembled from components derived from foods—refined starches, oils, sugars, protein isolates—and may include flavors, colors, emulsifiers, sweeteners, thickeners, or other additives used to create a particular taste, texture, or appearance.

That is different from taking a recognizable food and preserving it through freezing, pasteurization, or canning. Plain yogurt, frozen vegetables, or canned beans have been processed but can still retain a simple food structure and short ingredient list.

Typical examples

  • regular and diet soft drinks;
  • candy and many filled confections;
  • flavored extruded snacks;
  • many sugary breakfast cereals;
  • formulated packaged desserts;
  • some frozen pizzas, nuggets and reconstituted meat products;
  • certain bars, shakes and formulated meal replacements.

“Many” and “some” matter: classification depends on the actual formulation, not the name of the food category. Two breads, yogurts, or plant-based burgers can fall into different NOVA groups if one resembles a simple recipe and the other is rebuilt from multiple refined fractions.

Factory-made does not automatically mean ultra-processed

A bag of frozen peas may contain only peas. A can of beans may contain beans, water, and salt. Pasteurized milk remains milk that has received a heat treatment.

All came through industrial processing; none has to be an ultra-processed formulation. This distinction prevents “industrial” from becoming a synonym for “nutritionally poor” and recognizes that freezing, cooking, or pasteurizing can improve safety, shelf life, and convenience without rebuilding the food.

There is no five-ingredient rule

Ingredient count is a weak shortcut. Bread made from flour, water, yeast, and salt may be processed but not ultra-processed; a traditional recipe can contain many herbs and spices without resembling an industrial formulation.

A better question is what the ingredients are and what they are doing in the product. A long list of recognizable foods is not automatically equivalent to a formulation dominated by modified starches, protein isolates, syrups, refined fats, and several flavor- or texture-building additives.

One additive does not settle the question either

The presence of an additive does not automatically turn every food into an ultra-processed product. Additives can be used in processed foods for safety, stability, or technical reasons.

NOVA considers the formulation as a whole and its industrial purpose. Reducing the system to “contains additives” creates plenty of false positives. One antioxidant or thickener does not tell the full story, just as the absence of an additive does not guarantee an ideal nutrition profile.

NOVA and nutritional quality answer different questions

A product can be classified as ultra-processed and still provide protein, fiber, or micronutrients; a less-processed food can still be high in sodium, saturated fat, or sugar. The classification does not replace the Nutrition Facts label or serving size.

The two perspectives work better together. NOVA helps describe how much a diet relies on industrial formulations, while the nutrition label helps evaluate protein, fiber, added sugars, fats, and sodium in the specific product.

Why researchers care about the category

Diets high in ultra-processed foods often contain more products that are energy-dense and high in added sugars, refined starches, fats, or sodium, while displacing whole foods rich in fiber. Observational studies also report associations between higher intake and several adverse health outcomes.

Those associations do not prove that every product in the category has an identical effect or that one mechanism explains everything. Research is still separating the possible roles of formulation, eating rate, energy density, food structure, and displacement of less-processed foods.

The useful question at the package

Do not ask only, “Has this been processed?” Ask: Is this still mainly a recognizable food, or is it a formulation reconstructed from refined components? Then also look at protein, fiber, added sugars, fat, sodium, portion size, and the role it plays in your diet.

One product does not define an eating pattern. The category is most useful when it helps you notice what makes up most of your shopping and routine meals, not when it is used to label every food as morally good or bad.
