A black mark stands out sharply against a red or white radish, but depth and texture tell you more than the color itself. Some marks are superficial damage; others are associated with disease or decay.

When a spot may be only skin-deep
If the mark is small, dry, and the radish remains hard, cut through it. If clean, firm flesh appears immediately underneath and there is no abnormal smell, trim the damaged area generously and use the rest promptly.
A dry scar or abrasion behaves differently from a lesion that has changed the texture of the root.
When to stop trimming
A black area that extends toward the center, feels sunken or wet, or is surrounded by soft tissue can represent disease or rot. If each new slice still shows dark, deteriorated flesh, discard the radish rather than carving it down piece by piece.
Look at the whole root
- One dry scar, root firm: trim and inspect.
- Several sunken or cracked lesions: poor quality; inspect closely.
- Dark tissue extending into soft flesh: discard.
- Slime, mold, or unpleasant odor: discard.
A pithy old radish can also have a dry spongy center, but that is different from a wet black lesion. When both are present, judge the radish by the more serious sign.
Dry and superficial may be trimmable; dark, wet, and deep is a reason to toss the root. A cross-section tells you whether the problem ended at the skin or continued inward.
Cutting the radish open gives you more information than the skin alone
Radish skin can develop dark marks from abrasion, age, soil staining or localized tissue damage, and those causes are difficult to distinguish from the outside. A clean cut through the affected area is often the most useful check. Healthy radish flesh should be firm, crisp and moist-looking without being watery or slimy. If a dark mark is confined to a thin layer of skin and the flesh below is solid and normally colored, trimming that section is reasonable. A root that has merely become a little pithy or dry may be less pleasant to eat, but that is different from wet decay.
Discard the radish when black or brown tissue extends deep into the root, especially if it is soft, wet, hollow with dark breakdown, or accompanied by mold or an unpleasant odor. Multiple spreading spots are more concerning than one dry scar. The same principle applies to a bunch: one damaged radish does not automatically spoil every other root, but any neighboring radishes that are wet or touching decayed tissue should be checked carefully. Rinse sound roots just before use rather than storing them wet for long periods.
For better storage, remove leafy tops if they are still attached because the leaves continue drawing moisture from the root. Keep the radishes refrigerated in a container or bag that limits dehydration without trapping excessive free moisture. Crisp roots last longer and are easier to assess than wrinkled ones. If they become slightly limp but remain clean-smelling and free from decay, texture can sometimes improve after a short soak in cold water. That trick is only for dehydration, not spoilage. When black spots come with softness, slime, mold or off odors, soaking or aggressive trimming is not a sensible rescue strategy.
Radishes with intact, bright greens are often fresher at purchase, but those leaves should not remain attached for storage. They wilt quickly and pull water from the root. Separating them as soon as you get home helps the radish stay crisp, and the edible greens can be washed and cooked separately while still fresh.
Small radishes generally dehydrate faster than large dense roots, so the same storage time can produce different texture within one bunch. Using the softer but sound roots first is a simple way to reduce waste while reserving the crispest ones for salads.
If a cut radish looks normal but you are still unsure, use it promptly rather than returning it to storage for several more days. Once cut, the exposed surface loses moisture faster and is more vulnerable to quality decline, so refrigeration in a covered container and short storage are sensible.
