Black freckles on a white block of tempeh can look exactly like the kind of mold you would reject on another food. Tempeh is different because a selected mold, usually a Rhizopus species, is used to bind the cooked beans into a firm cake. As that culture matures it can form gray or black spores, especially near areas with more oxygen. Those dark spots can therefore be normal. The practical check is not “black equals bad,” but whether the block still has the firm structure and characteristic fermented aroma expected of tempeh and lacks signs of unrelated spoilage.
Why normal tempeh can develop black areas
The white coating that knits the beans together is fungal mycelium. During fermentation the culture grows through the beans and eventually reaches a stage where it can sporulate. The British Columbia Centre for Disease Control notes that extra oxygen and over-fermentation can lead to sporulation and darkening, and that the surface can turn black as spores form. This is primarily a quality change, not automatically a safety failure.
Commercial brands may show the same effect. Lightlife, for example, explains that black and white areas can develop during its tempeh production and describes the dark portions as normal and edible. The exact look varies with the culture, package, temperature, and how mature the fermentation was before chilling or pasteurization. Small pepper-like black or gray patches on an otherwise white, compact cake are therefore much less alarming than they would be on bread or soft cheese.
What makes a dark spot suspicious instead
Color has to be read together with texture and smell. Tempeh should remain cohesive rather than wet, slimy, or collapsing into mush. A mushroomy, nutty, or clearly fermented aroma can be normal, and some fresh products develop a mild ammonia note as they mature. A harsh putrid smell, strong sourness that was not present before, or an overpowering ammonia odor deserves more caution, especially when paired with a slick surface or breakdown of the cake.
Colors outside the normal white, gray, and black range are another reason to stop. Pink, green, blue, or yellow growth can indicate organisms other than the intended tempeh culture. Do not scrape an odd patch off a moist fermented cake and assume the rest has been restored. Follow the package date and storage directions as well; an expected black spore patch does not cancel a history of poor refrigeration or an obviously damaged package.
Storage history matters as much as appearance
Tempeh sold in supermarkets is not all processed the same way. Some products are pasteurized after fermentation, while fresh artisanal tempeh may contain a still-living culture and continue changing in the refrigerator. That difference affects aroma, color development, and shelf life, so the label is the best guide for whether the unopened product belongs in the refrigerator and how quickly it should be used after opening.
Keep refrigerated tempeh cold and tightly wrapped after opening. If a portion will not be used soon, freezing a fresh block is usually a better quality strategy than keeping it for many uncertain days in the refrigerator. FDA storage guidance also matters here: refrigeration slows bacterial growth, but appearance and smell cannot prove that a mishandled perishable food is safe. If the package has been warm for an extended period, a normal-looking black-spotted surface is not a safety test.
A practical way to decide
Look first for the normal pattern: a firm cake, beans held together by white growth, and black or gray specks that look like part of the culture. Then check for contradictions—slime, wet mushiness, colored growth outside the usual range, a swollen or leaking package, or an aggressively unpleasant smell. When those warning signs are absent and storage has been appropriate, normal sporulation does not require throwing the tempeh away.
The useful rule is that black on tempeh is a special case because the food is made with a mold culture. Treating every dark spore as spoilage wastes a product that may be perfectly normal, while treating every discoloration as “just fermentation” goes too far in the other direction. The expected culture has a recognizable white-to-gray/black appearance; changes that do not fit that pattern, especially with slime or foul odor, should be discarded rather than tasted for confirmation.
