A package can say 20 g Total Carbohydrate on the Nutrition Facts panel and advertise 4 g “net carbs” on the front. The 20-gram number is defined by FDA labeling rules; the 4-gram number is a manufacturer calculation.
Total Carbohydrate includes fiber
On a U.S. Nutrition Facts label, Total Carbohydrate includes dietary fiber, total sugars, starch, and sugar alcohols or other carbohydrate components when present. Dietary Fiber and Total Sugars appear underneath as parts of that total.
Net carbs usually starts with subtraction
A common formula is Total Carbohydrate minus Dietary Fiber, with some brands also subtracting all or part of sugar alcohols. For example, a food with 20 g total carbohydrate and 12 g fiber might be marketed as 8 g net carbs before any sugar-alcohol adjustment.
FDA does not require a standardized “Net Carbs” line, so the arithmetic can vary. Always look for the manufacturer’s explanation if the product contains erythritol, xylitol, sorbitol, allulose, or unusual fibers.
Sugar alcohols complicate the shortcut
Different sugar alcohols are absorbed and metabolized differently. Erythritol contributes very little energy; xylitol and sorbitol contribute more and may have a greater metabolic effect. Subtracting every polyol identically can therefore hide meaningful differences.
Use the regulated panel as the common language
When comparing products, start with serving size, Total Carbohydrate, Dietary Fiber, Total Sugars, and Added Sugars. Treat net carbs as an extra claim whose formula needs checking rather than as a replacement for the panel.
Total carbs is a label definition. Net carbs is an interpretation layered on top of it.
Net carbs is a marketing calculation, not a standardized nutrient
In the United States, companies and diet apps may calculate net carbs as total carbohydrate minus fiber, and sometimes minus all or part of certain sugar alcohols. There is no single federally defined “net carbohydrate” line on the Nutrition Facts panel. Two brands can therefore use different arithmetic and still print a similar front-of-pack claim.
That is why the regulated values are the safest basis for comparison. Start with total carbohydrate, dietary fiber, total sugars, added sugars, and any sugar alcohol information that is actually declared.
Not every sugar alcohol behaves the same way
Erythritol, xylitol, maltitol, sorbitol, and other polyols differ in absorption, energy value, digestive tolerance, and effect on blood glucose. Subtracting every gram as though it had zero metabolic impact oversimplifies those differences. Products with large amounts of polyols can also cause gastrointestinal symptoms in some people.
If a low-carbohydrate diet depends on precise counting, use a consistent method rather than switching between brand-specific net-carb claims. The ingredient list helps identify which polyols are present.
European labels require a different reading habit
On standard EU nutrition declarations, “carbohydrate” already excludes fiber, which appears on its own line when declared. Applying the common U.S. formula and subtracting fiber again would undercount. For products sold in Spain or elsewhere in the EU, use the carbohydrate value shown on the label and read polyols separately when relevant.
This matters particularly with “keto” bars, tortillas, and sweets, where large amounts of fiber and sugar alcohols are often used to create a low net-carb claim. Two products with the same advertised number can have very different ingredients and digestive effects. Comparing the regulated panel and ingredient list side by side gives a clearer picture than relying on the large front-of-pack number.
For ordinary foods such as beans, fruit, milk, grains, and vegetables, the net-carb shortcut is often unnecessary. Total carbohydrate, fiber, portion size, and the overall meal already provide enough information for most comparisons.
One more practical point is that “net” calculations can hide differences in serving size. A snack with 4 net grams in a 25-gram serving is not automatically lower in carbohydrate than another food eaten in a much larger portion. Always convert the claim back to the amount you will actually eat. For people tracking carbohydrate for medical reasons, a clinician or dietitian may recommend a specific counting method; a marketing formula on the front of a package should not replace that individualized plan.
The key habit is consistency: use the same label convention from one product to the next. Mixing U.S. and EU formulas, or switching between manufacturer calculations, creates more confusion than precision.
