“Natural flavor” sounds wholesome and “artificial flavor” sounds synthetic, but the U.S. label is not a nutrition score. FDA defines the categories mainly by where the flavoring substance comes from, not by whether the finished food is healthy or minimally processed.
Natural flavor starts with a defined source
Federal rules describe natural flavor as essential oils, extracts, distillates, protein hydrolysates, and related flavoring preparations derived from sources such as spices, fruits, vegetables, edible yeast, herbs, meat, seafood, poultry, eggs, dairy, and fermentation products, when their significant function is flavor rather than nutrition.
Artificial flavor is the remainder of the definition
If a flavoring substance is not derived from the natural-source categories in the regulation, it falls under artificial flavor. That classification says where the flavor came from; it does not automatically tell you whether the molecule is more toxic, stronger, or nutritionally important.
The same aroma molecule can exist in both contexts
Vanillin illustrates the point. Vanilla beans contain vanillin naturally, but the same chemical structure can be produced from other raw materials. The source and manufacturing route affect how the flavor is labeled even when a key aroma molecule is chemically identical.
Neither term describes the whole food
A soda made with natural flavor can still be high in added sugar. A low-sodium food containing artificial flavor can still have a strong overall nutrition profile. Ingredients, serving size, and the Nutrition Facts panel answer questions that the flavor label cannot.

The label term does not reveal the recipe
A flavor can be a complex mixture of many volatile compounds used in very small amounts. Seeing “natural flavor” or “artificial flavor” does not tell you how many compounds are present, how concentrated they are, or what other ingredients make up the food. It is therefore a poor shortcut for judging how processed a product is.
If nutrition is the concern, the Nutrition Facts panel and full ingredient list are more useful. Sugar, sodium, fat, fiber, and portion size can differ dramatically between two foods that use the same type of flavor designation.
Source rules differ between jurisdictions
Regulatory definitions are not identical worldwide. In the United States, natural flavor is defined partly by the source materials from which flavoring constituents are obtained. In the European Union, the wording around “natural” and named source claims has its own percentage and sourcing rules. A claim that is compliant in one market should not be interpreted through another market’s exact wording.
This is especially important for imported products, where the front label may be translated but the legal framework behind the term comes from the market in which the product is sold.
Allergen questions require the full ingredient information
The word “flavor” by itself is not enough to determine whether a product is suitable for someone with a food allergy. Allergen labeling rules still apply, and the safest approach is to read the complete ingredient and allergen statement rather than infer safety from “natural” or “artificial.” When the label is unclear, the manufacturer can provide product-specific information.
Natural and artificial flavors can also be used together. A product does not necessarily belong to one simple camp, and a flavor system may be combined with extracts, spices, acids, sweeteners, or other ingredients. The exact wording on the package reflects regulatory rules, not a simple scale from “real” to “fake.”
From a sensory perspective, both types are designed to deliver recognizable aroma and taste consistently. The decision to prefer one can be personal, but it should not be confused with a guaranteed difference in calories, vitamin content, safety, or overall nutritional quality.
The word “natural” can therefore answer a sourcing question without answering a nutrition question. A soft drink flavored with natural flavor can still be high in added sugar, and a low-sugar product can use artificial flavor while fitting a different nutritional goal. Treat flavor terminology as one detail of formulation, then evaluate the food with the same standards you would use for any other packaged product.
That approach also prevents a common labeling trap: assuming that an ingredient name describes dose. Flavorings are often present in tiny quantities, so the nutritional profile is usually driven by the food around them.
