Does Vinegar Expire? Why It Can Change Without Spoiling

Commercial vinegar is unusually shelf-stable because its acidity discourages most spoilage organisms. It can become cloudy, develop sediment, or form a vinegar mother without being spoiled. For preservation, however, an old bottle still needs the known acidity required by the tested recipe.

A bottle of vinegar can look different a year after opening: a little sediment, haze, or a gelatinous-looking layer may appear. With ordinary commercial vinegar, those changes are often about quality and natural vinegar bacteria rather than the kind of spoilage that makes many foods unsafe.

Acidity makes plain vinegar very shelf-stable

Commercial vinegar is an acidic product, commonly around 5% acidity for culinary white and cider vinegars. That environment strongly limits growth of many spoilage and disease-causing microorganisms.

Cloudiness or a “mother” can be normal

Unfiltered vinegar may naturally contain sediment. Even filtered vinegar can sometimes develop a vinegar mother — cellulose produced by acetic-acid bacteria — especially with oxygen exposure. It can look strange without meaning the vinegar has become dangerous.

Flavor and appearance can still drift

Long storage, light, oxygen, and repeated opening can soften aroma or alter color. Flavored vinegars have extra ingredients and may have different quality guidance, so their label deserves more attention than a bottle of plain distilled vinegar.

Quality can drift for years even when plain vinegar stays inhospitable to microbes

Plain vinegar is very acidic, which makes it a poor environment for most disease-causing microorganisms. That is why an unopened bottle can remain stable for a very long time and why a best-by date is often more about flavor and appearance than a sudden safety cutoff. Acetic acid does not disappear on a calendar date, although aroma compounds in specialty vinegars can slowly change and evaporation or oxygen exposure can alter sensory quality.

Cloudiness, sediment, or a gelatinous “mother” can appear in unfiltered or naturally fermented vinegars. Those changes are usually related to harmless acetic-acid bacteria and fermentation residues rather than spoilage. Distilled white vinegar is expected to stay much clearer, while apple cider, wine, and other less-refined vinegars can evolve visibly. An unusual foul odor, contamination from food particles, or a damaged closure is a different situation and deserves caution.

Flavored vinegars require more attention because herbs, fruit, garlic, or other additions change the product. Commercial flavored vinegars are formulated for stability, but homemade infusions do not automatically inherit the same shelf life as plain vinegar. Follow a reliable recipe and storage guidance for the specific infusion rather than assuming acidity makes every homemade mixture shelf-stable.

For canning and pickling, “old vinegar is still acidic” is not enough information. Safety recipes specify vinegar at a known acidity, commonly a standardized commercial product. Do not dilute it beyond the tested recipe or substitute homemade vinegar of unknown strength. A bottle can be perfectly fine as a salad dressing yet be inappropriate for a preservation formula if its acidity is not known. Shelf life and preservation suitability are related questions, but they are not identical.

Storage is simple but still worth doing well. Keep the cap closed so volatile aromas are not lost and contaminants do not enter, and store the bottle away from strong heat and direct sun. Refrigeration is generally unnecessary for plain vinegar, although a manufacturer may recommend it for a specialty or flavored product after opening. The label should win when it gives more specific instructions.

Evaporation can also concentrate a neglected bottle if the closure is poor. A stronger smell or darker color does not automatically mean danger, but it can make the vinegar less predictable in recipes. For dressings, taste is enough to decide; for preservation, use a commercial product with known acidity rather than an old mystery bottle.

Appearance changes are easiest to interpret when you know how the vinegar started. An unfiltered cider vinegar that becomes more sedimented is different from a previously crystal-clear distilled vinegar that suddenly contains foreign material. Keep the bottle clean around the neck and do not dip used utensils into it, because introduced food debris creates a local environment very different from plain vinegar. Good handling preserves both shelf life and confidence in what you are seeing.

Preservation safety is a separate issue

If vinegar is being used in a tested canning or pickling recipe, use a product with the specified known acidity. Do not assume homemade vinegar or an unidentified old bottle has the concentration a preservation formula requires. Vinegar can remain perfectly usable at the table while still being the wrong vinegar for a safety-critical canning recipe.
