Calling a fish “fatty” does not mean its fat is mostly saturated. Oily fish contain more total fat, while a substantial share is mono- and polyunsaturated, including EPA and DHA.

Species, season, diet and cooking method can move those numbers, so the table is best read as a scale rather than an immutable league table.
Total fat is not the same as omega-3
NIH lists, per 3-ounce cooked serving, about 1.83 g EPA+DHA for farmed Atlantic salmon, ~1.71 g for Atlantic herring, ~1.19 g for sardines in tomato sauce and ~1.02 g for Atlantic mackerel.
A fish can therefore rank higher in total fat but not in EPA+DHA.
What type of fat is present?
In oily fish, unsaturated fats commonly outweigh saturated fat. Both monounsaturated and polyunsaturated fats are present; EPA and DHA are two long-chain omega-3 polyunsaturated fatty acids.
Does more fat mean more calories?
Usually, yes. Fat provides about 9 calories per gram. A fish with 12 g fat per 100 g receives roughly 100 more calories from fat alone than a fish with 1 g. But calories do not capture protein, vitamin D, B12, selenium or omega-3 value.
Bottom line
Mackerel, salmon, herring and sardines are oily fish because they contain far more total fat than lean fish such as cod or hake, and much of that fat is unsaturated. For omega-3 specifically, compare EPA+DHA rather than total fat alone.
How to interpret ‘fatty fish’ in practice
The term oily fish is useful because it separates species that naturally store more fat in their flesh from very lean fish such as cod, haddock, or many flatfish. It is not a warning label. The extra fat changes flavor, juiciness, calorie density, and the amount of long-chain omega-3 a serving can provide. A lean white fish can still be an excellent protein choice, but it will not offer the same fatty-acid profile as herring, sardines, salmon, or mackerel.
Cooking method can blur the comparison if you do not keep it consistent. Grilling or baking a naturally oily fish leaves its intrinsic fat as the main contributor, while frying a lean fish can add substantial oil from the cooking process. A breaded fried cod fillet may therefore contain more total fat than a simply baked piece of salmon, even though cod itself is a lean species. When comparing nutrition tables, check whether the entries are raw, baked, grilled, canned in oil, or drained.
Canned products introduce another variable: the packing medium. Sardines or mackerel packed in olive oil can retain some of that oil after draining, while fish packed in water or tomato sauce may finish with a different calorie and fat profile. The label on the can is more relevant to your meal than a generic database value if you routinely buy one specific brand. The same principle applies to smoked fish, where sodium can become a larger nutritional difference than fat.
From a meal-planning perspective, higher-fat fish often need less added cooking fat because the flesh stays moist on its own. Lemon, herbs, mustard, tomatoes, or crisp vegetables can provide contrast without turning the dish into a heavy preparation. Lean fish, by contrast, may benefit from a measured amount of olive oil or another sauce to improve texture. Thinking about the whole plate prevents the word “fatty” from being interpreted in isolation.
A practical rotation can include both oily and lean fish rather than treating them as competing categories. Oily species bring EPA and DHA plus a richer texture; lean species bring protein with fewer calories from fat. The exact ranking changes with species and product, so the durable lesson is to read total fat and omega-3 as separate numbers. More total fat often means more energy, but it does not tell you exactly how much EPA and DHA the serving contains.
If mercury or other contaminants are part of your decision, treat that as a separate species-specific question. Fat content does not predict contaminant levels, and the safest choices depend on the fish, its size, origin, and public-health advice for the population eating it. Keeping those issues separate makes the nutrition comparison much clearer.
