“Salmon is a fatty fish rich in omega-3” is accurate but incomplete. Salmon does not have one fixed nutrition profile. Species, feed, wild versus farmed origin, and cooking all shift protein, fat, calories, and EPA+DHA.

Using a range is more accurate than pretending every salmon fillet is identical.
A normal serving provides a substantial protein dose
At 20 g protein per 100 g, a 5-ounce serving provides roughly 28 g protein. At 22 g per 100 g, the same serving is about 31 g.
If a 100 g raw portion loses 20 g water during cooking, the nutrients are now concentrated in about 80 g of cooked fish. That is why cooked salmon can show a higher protein value per 100 g without creating protein.
Salmon is much fattier than lean white fish
A salmon fillet with 12 g fat per 100 g may contain roughly 10 g more fat than a very lean fish with 1–2 g. That difference alone accounts for about 90 calories.
But some of that fat is EPA and DHA. NIH lists about 0.59 g EPA plus 1.24 g DHA in a 3-ounce serving of cooked farmed Atlantic salmon, for 1.83 g combined.
Farmed and wild salmon are not nutritionally identical
NIH notes that omega-3 content varies widely among fish and that farmed fish can contain high EPA and DHA levels depending on feed composition. It is therefore inaccurate to assume wild salmon always contains more omega-3.
Fresh and smoked salmon answer different nutrition questions
Smoking and curing can leave protein near the same broad 18–25 g/100 g range while sodium rises from roughly 100 mg/100 g in fresh references to well over 1,000 mg/100 g in many smoked products.
That is why a “salmon” comparison should state whether the product is fresh, canned, or smoked.
The calorie number for salmon is best read alongside its fat content, because the fat is part of what makes salmon nutritionally distinctive. Lean white fish can deliver similar protein with fewer calories, but salmon also supplies meaningful amounts of EPA and DHA. That trade-off is not a flaw: it is the reason salmon can serve as both a protein food and a source of long-chain omega-3 fats in the same portion.
Cooking method changes the final plate more than many nutrition tables show. Baking, poaching, steaming, or grilling salmon without much added fat leaves the fish itself as the main calorie source. Pan-frying in generous oil, glazing with sugar, or serving it with creamy sauces can add as much or more energy than the natural difference between wild and farmed fish. Salt also becomes important with smoked salmon, cured products, and heavily seasoned preparations.
A practical serving does not need to be huge. Roughly a palm-sized piece can provide a substantial amount of protein and omega-3 fat, while the rest of the meal can come from vegetables, potatoes, whole grains, or legumes. If salmon appears regularly, alternating species and preparation styles gives variety and avoids treating one nutrient number as the whole story.
Species and origin affect the numbers, but labels rarely tell the whole story. Atlantic salmon sold in supermarkets is commonly farmed, whereas sockeye, coho, or pink salmon may be wild-caught depending on the market. Farmed fish often contains more total fat and therefore more calories per 100 grams, while wild fish can be leaner. Omega-3 content can still be substantial in both, and exact values vary with feed, season, species, and cut. That variability is why a sensible range is more useful than pretending every salmon fillet has one universal composition.
Food safety and doneness are separate from nutrition. Keep raw salmon cold, avoid cross-contamination, and cook or otherwise prepare it using appropriate guidance for the recipe and the people eating it. Raw or lightly cured preparations require greater care, particularly for pregnant people, older adults, young children, or anyone with reduced immunity. Smoked salmon is ready to eat but can contain considerably more sodium than fresh fish, so it serves a different role despite looking similar on a plate.
