“Cheese” ranges from very moist fresh products to dense aged cheeses. A fair fat comparison uses grams of fat per 100 g and a clearly defined cheese type.

These are specific USDA references. Fat-free cottage cheese, fresh mozzarella and reduced-fat branded products can differ substantially, so the package label should override a category average.
Water dilutes fat per 100 g
The 1% cottage-cheese reference is roughly 82–83% water. Aged cheese has lost much more water, concentrating fat, protein, calcium and calories into the same 100-g weight.
Milkfat level matters too
Part-skim ricotta at 7.9 g fat contains about 8 g less fat per 100 g than part-skim mozzarella at 15.9 g and about 25 g less than cheddar near 33 g.
Low fat does not mean low sodium
A USDA 1% cottage reference contains about 406 mg sodium/100 g, while a no-salt-added version is near 13 mg. Fat and sodium have to be checked separately.
Moisture is the hidden variable behind many low-fat rankings. Cottage cheese contains a great deal of water, so its fat per 100 g can be far below that of a dense aged cheese even when both are dairy products. Comparing a wet fresh cheese with cheddar therefore tells you as much about water content and manufacturing as it does about the milk itself.
Reduced-fat versions create a second layer of variation. “Part-skim,” “low-fat,” and “fat-free” are not interchangeable descriptions, and products within a category can use different formulations. Protein, sodium and calories can shift as manufacturers change moisture and milk solids, so the exact label is more informative than assuming every reduced-fat mozzarella or cottage cheese has the same numbers.
Serving size changes the practical difference. A tablespoon of grated Parmesan can contribute less total fat than a much larger bowl of a lower-fat cheese simply because the quantity eaten is smaller. Per-100-g values are excellent for comparing concentration; per-serving values tell you what lands on the plate.
Fat is also only one reason to choose a cheese. Sodium can be high in some relatively low-fat cheeses, while protein and calcium may remain useful. Flavor intensity matters too: a small amount of a stronger cheese may satisfy a recipe where a larger amount of mild cheese would be needed. The best comparison therefore uses fat concentration, actual portion, sodium and the role the cheese plays in the meal.
Cooking use can narrow the choice quickly. Cottage cheese works well in bowls and some fillings but will not behave like mozzarella on a pizza. Part-skim mozzarella may offer a middle ground where melt and stretch matter, while ricotta provides a different creamy structure. Choosing the lowest number on a fat table is therefore not always useful if the cheese cannot perform the job required by the recipe. Start with the culinary function, then compare lower-fat options within that function. This gives a fairer result than ranking every fresh, brined and aged cheese in one list and assuming they are interchangeable.
For sandwiches or salads, compare the amount you actually add rather than assuming a lower-fat name guarantees a lighter meal. A thin slice of a richer cheese and a large scoop of cottage cheese can reverse the ranking based on grams per 100 g. Package labels make this easy: check fat and calories for the stated serving, then scale them to your usual portion. That keeps the decision tied to the plate instead of to a category label.
A useful shortcut is to compare like with like: mozzarella against mozzarella, cottage cheese against cottage cheese, and then choose the formulation that fits your priorities.
Serving size changes the practical result
Thirty grams of cheddar at 33 g fat/100 g provide about 9.9 g fat. A full 100 g of 1% cottage cheese provides about 1 g. Typical serving sizes differ greatly among cheese styles.
