Water explains much of the cheese protein ranking. The more a cheese is pressed, aged and dried, the more protein appears in every 100 grams. Parmesan can exceed 35 g/100 g while cottage cheese often sits around 11–13 g, but that does not mean a normal Parmesan serving gives three times the protein of a normal cottage-cheese serving.
To make sense of the ranking, read two things together: how concentrated the cheese is and how much people normally eat. Aging pushes the first number up; serving size can completely change the second.

The pattern is not random. The leaders are low-moisture cheeses; the foods near the bottom contain much more water. Cheddar, Gouda and Provolone, meanwhile, are close enough that tiny protein differences rarely need to drive the choice.
Aging concentrates everything, not just protein
Parmesan provides about 35.8 g protein/100 g, Pecorino Romano around 32 g and Gruyère near 30 g. As water leaves during production and aging, more milk solids remain in each 100 grams. Calcium, fat and often sodium become concentrated along with protein.
A 1-ounce serving of these cheeses usually provides roughly 8–10 g protein. That is a lot for a small amount of food, but still less total protein than a large serving of a fresh high-protein cheese can provide.
In the middle of the ranking, the exact product matters more than tenths of a gram
Cheddar, Gouda and Provolone cluster around 25–26 g/100 g. One ounce provides about 7 g protein, so fractions of a gram per 100 g are unlikely to matter in a real meal.
Mozzarella shows a difference that does matter. Low-moisture mozzarella can reach about 24 g/100 g, while fresh mozzarella, with much more water, may be around 18–20 g. The main change is concentration, not a fundamentally different kind of protein.
Fresh cheese can lose by weight and win by serving
Cottage cheese is often around 11–13 g protein/100 g, roughly one-third of Parmesan by weight. But a 1-cup / ~200 g bowl can provide 22–26 g protein, more than a normal 1-ounce serving of Parmesan.
That is why a 100-gram table and an actual meal answer different questions. Parmesan is a highly concentrated way to add flavor and protein; cottage cheese can be the main protein component of a snack or meal.

Serving size does not erase concentration; it explains how concentration plays out. Aged cheeses remain protein-dense by weight, while fresh cheeses can be eaten in much larger portions and may deliver more total protein with lower calorie density.

Parmesan, Romano and Gruyère lead because they contain less water. Once real servings enter the picture, moisture, portion size, sodium and fat matter more than the exact position in the ranking. The per-100-gram number compares concentration; the serving tells you what the cheese actually contributes to a meal.
