People often judge salmon by whether the center is pink, pale or beginning to flake, but those signs change with species, thickness and cooking method. For the standard U.S. food-safety target, the clearest test is 145°F (63°C) at the thickest part of the fish. A thermometer answers the question directly and also helps prevent the common mistake of cooking far beyond the target while waiting for an exaggerated visual change.
Measure the thickest part, not the edge
The thin tail end of a fillet may be fully cooked while the center of a thick portion is still cooler. Insert an instant-read thermometer into the thickest area and aim for the middle of the flesh. With a thin fillet, sliding the probe in from the side can make it easier to place the sensing tip centrally.
Avoid touching a hot pan, baking sheet or bone with the probe, because that can distort the reading. If the fillet has very uneven thickness, check more than one location. The coldest central spot is what matters for a safety decision.
Visual cues are useful but less exact
FDA says cooked fish should become opaque and separate easily with a fork. As heat changes muscle proteins, translucent flesh becomes more opaque and the flakes begin to separate along natural segments. Those are sensible signs when a thermometer is unavailable.
They do not correspond to one universal temperature with perfect precision. A fatty salmon, a leaner species and a piece cooked sous vide can look different at the same internal temperature. If the question is safety rather than personal texture preference, direct measurement is more reproducible.
The white albumin is not a reliable doneness meter
The white material that sometimes appears on the surface is albumin-rich fluid pushed out as muscle fibers contract. It is harmless and can appear in both gently and aggressively cooked salmon. The amount depends on temperature gradient, brining, thickness and how quickly the fish heats.
A lot of white protein may accompany overcooking in some preparations, but it does not prove a specific internal temperature. Likewise, little albumin does not mean the center is undercooked. Treat it as a quality clue, not a food-safety instrument.
Color alone can mislead
Raw salmon naturally ranges from pale orange to deep red depending on species, diet and pigments. Cooking lightens and opacifies the flesh, yet the center may remain visibly pink even after reaching a safe temperature. Conversely, a thin piece can look pale before you have actually measured its coldest point.
Marinades, smoking, curing and glazing can change appearance further. That is why a rule such as ‘cook until no pink remains’ can unnecessarily dry the fish without giving a more objective safety check.
Temperature also helps you avoid drying the fish out
Once the interior reaches the target you are using, additional heat continues squeezing moisture from muscle proteins. A thermometer gives a clear stopping point and reduces the temptation to keep cooking ‘just in case’ based on appearance alone.
Remember that a thick fillet can continue warming briefly after it leaves a hot oven or pan. Carryover cooking depends on thickness and method, so do not rely on a fixed number of extra degrees. Measure, rest as your recipe requires and serve promptly.
Use the thermometer whenever safety is the concern
A visual check is reasonable when no tool is available: opaque flesh that separates easily with a fork is the FDA fallback description. But if you cook salmon often, a fast thermometer is inexpensive and gives much more consistent results across ovens, pans and fillet sizes.
For U.S. guidance, 145°F (63°C) in the thickest part is the straightforward target. Do not let a patch of white albumin, the shade of pink or the condition of a thin edge overrule the temperature of the center.
