Cooking salmon to 145°F (63°C) remains the lower-risk option. If you choose to eat it raw, buy from a supplier that specifically understands fish intended for raw consumption and can provide the relevant handling or freezing information.

Parasite control usually means validated freezing or a qualifying aquaculture source

The FDA Food Code requires most fish served raw or undercooked in restaurants to undergo parasite-destruction freezing. One accepted method is -4°F (-20°C) or below for seven days; faster commercial methods use -31°F (-35°C) under specified time combinations.

The Food Code exempts some aquacultured fish, including salmon, when they are raised under defined conditions and fed formulated feed that contains no live parasites infective to the fish. The exemption depends on how the fish was raised and documented, not merely on the word “farmed.”

A typical home freezer may not reliably maintain the temperatures and performance needed to reproduce a commercial parasite-control process, especially for thick portions. Freezing instructions should not be improvised from a household freezer dial.

Freezing for parasites does not make raw salmon sterile

Parasite destruction is only one control. Raw fish can also carry bacteria or become contaminated during filleting, packaging, transport, or preparation. Freezing is not a universal bacterial kill step, so a previously frozen fillet still needs a reliable cold chain and clean handling.

Keep salmon refrigerated until preparation, use a clean knife and board, and keep it separate from foods that will not be cooked. Once cut for sashimi or another raw dish, serve promptly rather than letting pieces sit warm through a long meal.

Smell and color cannot certify microbiological safety. A fillet can look excellent and still carry pathogens, while a sour, ammonia-like, or rotten odor is a clear reason to discard regardless of intended use.

Raw salmon is a higher-risk choice for some people

FoodSafety.gov advises people at increased risk of serious foodborne illness to avoid raw or undercooked seafood. That group includes pregnant people, adults 65 and older, children under five, and people with weakened immune systems.

For these diners, properly cooked salmon is the safer choice even when the fish came from a reputable sushi supplier or met parasite-control requirements. Parasite management does not eliminate every microbial hazard.

Ceviche, curing, cold smoking, or a salt marinade should not be treated as equivalent to full cooking. Acid and salt can change texture and flavor without reliably providing the same pathogen control as heat.

Ask about intended raw use and handling, not just a marketing label

When buying salmon for raw preparation, tell the fishmonger or supplier exactly how you plan to serve it. Ask whether the fish is appropriate for raw consumption under their handling system and whether required parasite controls or aquaculture documentation apply.

Do not assume that a supermarket fillet becomes suitable for sashimi simply because it was previously frozen at some point. The relevant question is whether the freezing conditions and source met the needed controls. The separate term “sushi grade” is a labeling and market question of its own, not a substitute for food-safety details.

Thawing and storage still matter after the supplier has managed parasite risk. Thaw frozen salmon in the refrigerator rather than on the counter, keep it at refrigerator temperature, and follow the seller’s use-by guidance for fish intended for raw service. A validated freezing step months earlier does not give the thawed fillet unlimited refrigerator life. If the package is vacuum sealed, follow the manufacturer’s thawing directions as well; some reduced-oxygen fish packages instruct consumers to remove the fish from the pouch before thawing.

The practical answer is: raw salmon can be served with managed risk when source, parasite control, temperature, and hygiene are all appropriate, but it is never zero-risk. Cooking to 145°F (63°C) is the safest general household recommendation.
