Liquid on Top of Sourdough Starter: What Hooch Is and What It Means

After the starter peaks and sits unfed, the easy food supply declines. Gas production slows and the mixture can separate. Liquid accumulates on the surface or sometimes in a middle layer, especially in a high-hydration starter stored for a long time.

The longer the neglect, the darker the liquid can become. That color alone does not necessarily mean the starter is dead. A refrigerated starter forgotten for weeks may look dramatically separated yet recover after repeated feedings.

You can stir the hooch in or pour it off before feeding

Both approaches are used successfully. Stirring it back retains the acidic and alcoholic liquid and may give the starter a sharper aroma initially. Pouring it off reduces that concentrated flavor before you keep a small portion and feed it with fresh flour and water.

The important step is not the choice between stirring and pouring but restoring a regular feeding schedule. Keep a modest amount of starter, add flour and water in the ratio your maintenance method uses, and let it ferment at an appropriate room temperature until activity returns.

A severely neglected culture may need several feedings before it reliably rises. Judge recovery by repeated expansion, bubbles, and a clean sour or yeasty aroma rather than expecting one meal to erase weeks of neglect.

Hooch and mold look very different

Hooch is liquid. It may be transparent, smoky gray, brown, or almost black and usually lies as a smooth layer. Mold produces colonies with texture: fuzzy, hairy, powdery, or raised spots. Unusual pink or orange color in the starter itself is another discard sign in common sourdough guidance.

Odor needs context too. Alcohol, vinegar, and even a mild nail-polish-remover note can occur in a very hungry starter. A genuinely rotten, putrid, or garbage-like smell suggests contamination rather than ordinary hunger.

If mold is visible, or the culture has pink or orange growth, do not scrape off the top and continue. Discard the starter and clean the container before starting again.

Prevent hooch by matching the feeding schedule to storage temperature

A starter kept at room temperature consumes food much faster than one held in the refrigerator. Frequent bakers may feed daily or according to the starter’s rise-and-fall cycle, while occasional bakers often refrigerate the culture and refresh it before baking.

Use the starter’s behavior rather than the clock alone. When it has risen, peaked, and begun to collapse, it is moving toward hunger. Feeding before long neglect keeps the microbial population vigorous and reduces dramatic separation.

The position of the liquid can also help explain what happened. Classic hooch often sits on top after a starter has collapsed, but a thin liquid layer can form in the middle when a very wet starter separates before all fermentation activity has stopped. Either pattern can follow long intervals between feedings. By contrast, a starter that produces a watery layer only minutes after mixing may simply have a hydration or flour-absorption issue rather than true hooch. Keep notes on flour type, water ratio, room temperature, and time to peak for a few cycles. Those observations make maintenance much easier because they show whether the culture is consistently exhausting its food too early. Adjusting the feed ratio or refrigerating between bakes is more effective than repeatedly rescuing the starter after a dark liquid layer has already developed.

Hooch is mainly a message about maintenance: the starter has run low on food. Feed it and watch how it responds. Reserve discarding for true spoilage signs such as mold, pink or orange contamination, or a putrid odor rather than for a simple layer of fermentation liquid.
