An established sourdough starter that smells like acetone or nail-polish remover is usually telling you that it is hungry, not that it must be thrown away. Bakers commonly notice the sharp solvent note after the starter has peaked, fallen, and remained unfed for too long. The everyday description does not necessarily identify one single chemical. Fermentation can produce ethanol, acetic acid, esters such as ethyl acetate, and many other volatile compounds. As the balance changes in an overripe starter, the overall aroma can resemble solvents.
The smell becomes stronger after the starter has exhausted easy food
Fresh flour supplies starch that enzymes break into smaller sugars. Yeasts and lactic acid bacteria consume those sugars and produce carbon dioxide, acids, alcohols, and aroma compounds. While food is plentiful, a healthy starter often smells mildly yeasty, fruity, dairy-like, or cleanly sour.
After the starter reaches maximum volume and begins to collapse, available sugars decline. Acids and alcohols become proportionally more noticeable, and a neglected culture may also form hooch. Warm kitchens speed the cycle, so a feeding schedule that worked in winter may leave the same starter very hungry in summer.
A strong solvent note is therefore often a timing problem. It tells you that the interval or feeding ratio no longer matches how quickly the culture is consuming its food.
Recovery usually takes fresh flour, water, and repeated feeding
Keep a small portion of the starter and feed it according to your normal maintenance ratio with fresh flour and water. If it has been badly neglected, a larger refreshment relative to the amount of old starter can dilute accumulated acids and fermentation products more effectively.
Let it rise at a moderate temperature, then repeat the feeding when it has peaked or according to the schedule of the method you follow. One refresh may soften the smell, but two or more cycles are often needed before aroma and rise become predictable again.
Do not judge recovery by smell alone. Look for consistent expansion, bubbles throughout the culture, and a repeatable rise-and-fall cycle. A starter that smells better but barely rises may simply need more time to rebuild activity before baking bread.
Acetone-like aroma is different from mold or putrid spoilage
A hungry starter can smell sharp, alcoholic, vinegary, or solvent-like while still looking normal. Mold, on the other hand, creates fuzzy or colored growth. Pink or orange streaks in the starter are widely treated as a discard sign.
A genuinely rotten, garbage-like, or putrid smell is also different from the clean chemical sharpness of an overripe ferment. If that odor appears together with unusual color or visible contamination, do not try to rehabilitate the culture by feeding through it.
New starters can pass through strange-smelling stages while their microbial community stabilizes, so the age of the culture matters too. The most reliable expectations apply to a mature starter whose normal behavior you already know.
Prevent the problem by feeding for the conditions you actually have
Temperature, flour choice, hydration, and feeding ratio all influence how fast a starter consumes food. A warm room shortens the interval between peak and collapse. A larger feeding provides more fresh substrate and can extend the time before the starter becomes sharply acidic and overripe.
If you bake infrequently, refrigeration slows the culture and reduces how often it needs attention. Bring it back through one or more room-temperature feedings before relying on it for leavening. If you keep it on the counter, use its rise cycle rather than a rigid clock when possible.
A nail-polish-remover smell is usually recoverable because it reflects fermentation balance, not automatic contamination. Feed the starter and watch for normal activity to return. Discard instead when solvent aroma comes with fuzzy mold, pink or orange growth, or a truly putrid smell.
